Mincemeat and Cherry Flapjacks Recipe

I’ve never met anyone that doesn’t love a good flapjack and they are such a simple recipe to vary, creating all different kinds of flapjack varieties really easily.

A few years ago we made Mincemeat Flapjacks which are something we make year after year without fail but this year I decided to make a new Christmas flapjack recipe and came up with Mincemeat and Cherry Flapjacks.

What to do with leftover mincemeat?

I’m always looking for new ways to use homemade mincemeat instead of just making traditional mince pies and over the years we’ve made mince pie cookies, mince pie fudge and now our latest creation, Mincemeat and Cherry Flapjacks.

How do you make cherry mincemeat flapjacks?

These easy leftover mincemeat flapjacks are full of flavour and we use 200g mincemeat – half a jar – for a subtle flavour but you could use a whole jar if you want a really festive flavour. The recipe would remain the same but the flapjack may need a little extra cooking time.

We also use soft light brown sugar but you can use other types of sugar if you want to. It’s a great recipe that works well with whatever you have to hand. We always use pretty standard, and cheap, rolled oats too. It really isn’t a fancy recipe!

With this Christmas mincemeat flapjacks recipe, we also sometimes throw in some extra dried fruit to compliment the mincemeat qualities and add more texture. I’m going to be working on chocolate mincemeat flapjacks next – watch this space!

Can you make vegan mincemeat flapjacks?

Festive vegan mincemeat flapjacks would be simple to make. You would just need to make sure you use a vegan butter alternative and suet free vegan mincemeat – or make your own mince meat without suet in it.

Mincemeat and Cherry Flapjacks

What equipment do you need for this mincemeat Christmas flapjacks recipe?

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already – that is what makes flapjacks so simple and convenient to make.

Here’s our delicious Mincemeat and Cherry Flapjack Recipe:

Ingredients

  • 200g margarine or butter
  • 200g soft brown sugar
  • 120ml golden syrup
  • 400g porridge oats
  • 200g mincemeat
  • 250g glace cherries

Instructions

  • Preheat oven to 160C/325F/Gas 3 and grease a suitable baking tray
  • Put the margarine in a saucepan and melt over a low heat. Add the sugar and syrup, stirring until melted together.
  • Add the porridge oats, mincemeat and cherries and stir until combined.
  • Spread the oat mixture onto the baking tray and bake for 25 minutes until golden brown.
  • Slice whilst still warm and leave to cool in the baking tray.
