Apple and Mincemeat Flapjacks Recipe

I love flapjacks and there is nothing quite like a seasonal flapjack to capture the flavours of the season. A couple of weeks ago I shared a Cherry and Mincemeat Flapjack recipe and this week I thought I’d share an Apple and Mincemeat Flapjack recipe, both of which are variations on our original mincemeat flapjack recipe and a great way to use up leftover mincemeat.

Why should we make an Apple and Mincemeat Flapjack?

Aside from being a great way of using up mincemeat, Christmas mincemeat flapjacks are so full of flavour and a flavour combination that most people will like. It’s a great easy festive alternative to mince pies and such a lovely sweet treat to enjoy around Christmas.

What equipment do you need for this apple mincemeat flapjack recipe?

You can make this Christmas flapjacks recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already – that is what makes flapjacks so simple and convenient to make.

Here’s our Mincemeat and Apple Flapjacks Recipe:

Ingredients

  • 200g margarine or butter
  • 200g soft brown sugar
  • 120ml golden syrup
  • 400g porridge oats
  • 200g mincemeat
  • 100g dried apple
Apple and Mincemeat Flapjacks

Instructions

  • Preheat oven to 160C/325F/Gas 3 and grease a suitable baking tray
  • Put the margarine in a saucepan and melt over a low heat. Add the sugar and syrup, stirring until melted together.
  • Add the porridge oats, mincemeat and apple and stir until combined.
  • Spread mixture onto the baking tray and bake for 25 minutes until golden brown.
  • Slice whilst still warm and leave to cool in the baking tray.
