With plenty of rhubarb growing in the garden, and bananas constantly going past their best, our latest bake had to be Rhubarb and Banana Muffins. Easy to make and fantastic for breakfast or a sweet treat in the afternoon, they’re a bake the whole family will enjoy.

What do you need to make Rhubarb Banana Muffins?

For these banana and rhubarb muffins we use typical baking ingredients – eggs, butter or margarine, caster sugar and self raising flour although we add a little baking powder or baking soda to give them a little extra boost!

They also have bananas and chopped rhubarb in them which gives a fantastic flavour to the bake. It’s a winning combination. We always use fresh rhubarb for this recipe but you could always use frozen rhubarb or canned rhubarb if you wanted to.

We finish these muffins with a sprinkle of oats that make them look instantly more fancy and wholesome. They really are a delicious bake and perfect for rhubarb season. There’s nothing quite like a lovely, simple, seasonal bake.

What equipment do you need to make these muffins?

You will no doubt have most of the equipment you need for this recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:

Here’s our easy recipe for Banana and Rhubarb Muffins:

Ingredients

  • 4 eggs
  • 200 g butter/spread
  • 350 g caster sugar
  • 450 g  self-raising flour
  • 2 tsp baking powder
  • 3 overripe bananas
  • 150g rhubarb, chopped
  • rolled oats

Instructions

  • Preheat oven 180C/Fan 160C/gas 4
  • Line muffin pans with fairy cake cases
  • Put all the ingredients, aside from the rolled oats, in a mixing bowl and mix until combined.
  • Spoon the banana mixture into the cake cases and sprinkle with porridge oats.
  • Bake in the oven for 25-30 minutes until browned.
