Lotus Biscoff Rocky Road Recipe

We love rocky road as a family and it’s something we make often. We have so many rocky road recipes that we keep coming back to. Super easy to make, taking just minutes before putting it into the fridge to set, it’s a great sweet treat for any occasion.
This no bake Biscoff rocky road is perfect for any Biscoff fan. Full of that glorious Biscoff cookie butter flavour, it’s an indulgent treat that makes a nice change from traditional milk chocolate rocky roads.
How do you make Lotus Biscoff rocky road?
To make this white chocolate Biscoff rocky road traybake you simply melt together white chocolate and Lotus Biscoff spread before stirring in broken up Biscoff cookies and marshmallows. It could not be easier.
We use smooth Biscoff spread for this recipe but you could use crunchy Biscoff spread if you wanted. And you just use normal Lotus Biscoff biscuits, broken up. You can use crushed Biscoff biscuits if you’re short of time and want smaller pieces in the rocky road.
We use an 8 inch square tin for this rocky road but you can use any size tin that you like. If you want to make Lotus Biscoff bark instead you could spread the rocky road thinner over a baking sheet to give a thinner bark finish with that same glorious Biscoff flavour.
Can you vary this recipe?
You could use milk chocolate for this Biscoff tray bake recipe but our whole family agree that white chocolate and Biscoff is a winning combination! However, Biscoff rocky road with milk chocolate would still be lovely – we just prefer white chocolate for this recipe.
You could add dried fruit or glace cherries to this rocky road Biscoff recipe like a traditional rocky road if you wanted or maybe even some chocolate chips! Many people add unsalted butter or golden syrup when melting the chocolate but we have never found it necessary.
You can store Biscoff rocky road in an airtight container for a few days – although it never seems to last that long in our house. It really is delicious.

What equipment do you need to make rocky road?
Rocky Road doesn’t need anything special to make it, and you probably already have everything you need at home, but this is the equipment we use:
- A large glass bowl
- A saucepan
- A wooden spoon
- A spatula
- A deep baking tray or baking tin
- Baking paper sheets
- Food scales
- Good quality knives to cut the rocky road into pieces
- Airtight containers for storage
- Food gift bags to package it up and give as gifts
Once you’ve got everything you need to make the rocky road you can just keep making it again and again – in so many different flavours too!
Here’s our tasty Lotus Biscoff Rocky Road recipe:
Ingredients:
- 300g White Chocolate
- 150g Lotus Biscoff Spread
- 100g Mini Marshmallows
- 150g Lotus Biscoff Biscuits
Recipe:
- Break up the chocolate bars into small pieces and put it in a large glass mixing bowl with the Biscoff Spread
- Melt using the glass bowl over simmering water or in the microwave using short blasts and stirring regularly.
- Once melted, leave to cool slightly for 5-10 minutes.
- In a separate large bowl, mix the biscuit pieces with the marshmallows.
- Pour in the melted chocolate and stir well.
- Pour the chocolate mixture into a lined cake tin or brownie pan.
- Put in the fridge to set for at least 4 hours.
- Slice and serve.
