Lotus Biscoff Loaf Cake Recipe

Who doesn’t love Biscoff? It’s turned into such a familiar flavour, homely and comforting whilst being so indulgent too. As regular readers will know, we love baking loaf cakes and it simply made sense to make a Lotus Biscoff Loaf Cake.
What is a Lotus Biscoff Loaf Cake?
This Lotus Biscoff Loaf Cake is a beautifully moist, delicious cake that can be sliced and served easily. It’s decorated simply with melted Biscoff spread and crushed Lotus Biscoff cookies. It’s a great choice for any Biscoff fan and works well for anything from an afternoon tea spread to a school bake sale.
For this loaf cake we use typical cake ingredients – butter or margarine, light brown sugar, self raising flour and eggs along with a generous helping of Biscoff spread.
Although we use soft brown sugar, aster sugar or golden sugar both work well. You can also all purpose flour or plain flour along with a little baking powder or baking soda if you wanted – we just use self raising flour for ease.
We also use smooth Biscoff spread for this Biscoff cake recipe but you can use crunchy Biscoff cookie butter spread if you wanted to add a little texture to the bake. We always have a jar of Biscoff spread in the cupboard!
If you wanted to make this Biscoff sponge cake a little bit more fancy – for a special occasion – you could top instead with homemade Biscoff buttercream using a piping bag.

What equipment do you need for this loaf cake recipe?
You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:
As you can see, it’s all things you probably have already. We use loaf tin liners to guarantee that bakes come out of the tin easily and they’re great when baking as gifts too but parchment paper works well too.
So here’s our Biscoff Loaf Cake Recipe:
Ingredients
- 230g light brown sugar
- 250g self raising flour
- 220g unsalted butter or margarine
- 3 large eggs
- 100g Lotus Biscoff Spread
Topping
- Melted Biscoff Spread
- Crushed Lotus Biscoff biscuits
Recipe
- Preheat oven at 160C/300F/Gas 2
- Cream together the butter and sugar in a mixing bowl
- Add the rest of the ingredients and mix well
- Pour the cake batter mixture into a lined/greased loaf tin and bake in the middle of the oven for 50-60 minutes until brown on the top and a skewer comes out clean. Leave to cool completely on a wire rack.
- Drizzle with the melted Biscoff spread and scatter the crushed Lotus biscuits on top. Slice and serve.
