Lotus Biscoff Banana Loaf Cake Recipe

Like most people, we love baking a banana cake when we have ripe bananas going past their best. But, over the course of the pandemic we have made so many banana loaves that we have got a bit bored of them. So, to stir things up a bit, and get us excited for banana cake again, I’ve been adding new flavours to our favourite bakes.

Lotus Biscoff Banana Loaf Cake

The first variation we made was a lovely Banana Lotus Biscoff Loaf Cake. It’s quite like a banana bread recipe, one that can be enjoyed with no excuse needed, as part of an afternoon tea spread or just a slice with a cup of tea. This is a perfect bake if you love Biscoff!

Lotus Biscoff Banana Loaf Cake

This Lotus Biscoff Banana Bread is so moreish. It’s moist and full of flavour, with a bit of a caramel kick to it. Plus, the Lotus Biscoff biscuits on the top give a lovely texture to the finished bake, one that everyone seems to love.

For this recipe you can use any type of sugar. We love using light brown sugar as the flavour goes so well with the Biscoff cookie butter but we often use golden caster sugar or even granulated sugar. It’s a great recipe to use whatever you have to hand at home.

What Lotus products should we use in this banana bread Biscoff bake?

For this moist banana bread recipe we use smooth Lotus Biscoff spread and crushed Lotus Biscoff biscuits on the top. You could also try using the crunchy biscuit spread instead for an added crunch to the bake.

Lotus Biscoff Banana Loaf Cake

Here’s our delicious easy Banana Lotus Biscoff Cake Recipe:

Ingredients

  • 300 g plain all purpose flour
  • pinch salt
  • 1 teaspoon bicarbonate of soda
  • 85 g butter or margarine at room temperature
  • 110 g sugar
  • 3 eggs, beaten
  • 3 bananas, mashed
  • 150g Lotus Biscoff spread

Topping

  • 40g Lotus Biscuits, crushed

Instructions

  • Grease a loaf tin or line with a cake tin liner and preheat the oven to 190C/375F/Gas 5
  • Put all the ingredients, aside from the topping, in a large mixing bowl
  • Mix everything together and pour the finished cake batter into the loaf tin
  • Sprinkle the crushed Lotus biscuits on top
  • Bake for 55 minutes until a skewer comes out clean.
