Rhubarb and Orange Muffins Recipe

We have been growing rhubarb in the garden for the last few years and it is the easiest thing to grow! The harder thing though is looking for ways to use the rhubarb and not just making yet another crumble! We made some incredibly easy Rhubarb and Orange Muffins that taste great and so I thought I’d share the easy rhubarb muffins recipe with you,

Rhubarb and Orange Muffins

Rhubarb is such a tricky fruit to cook with. It’s often too sour or too stringy, too hard and undercooked. Creating a recipe that has the right balance of flavours is hard but not impossible – and rhubarb is great for baking.

In this orange rhubarb muffin recipe the rhubarb works well with the sugar, making the rhubarb sweeter than it ordinarily would be. The orange zest really compliments the rhubarb flavour too whilst the orange juice keeps the muffins moist.

What size should these rhubarb cupcakes be?

You can make the orange rhubarb muffins any size you like but this recipe is for standard muffin case sized bakes. If you’d like to make rhubarb mini muffins you can purchase smaller cases but make sure that you adjust the cooking time accordingly.

What equipment do you need to make these seasonal fruit muffins?

You will no doubt have most of the equipment you need for this recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:

These are pretty much staples for baking in any home kitchen and once you have them you won’t need to replace them often.

So here’s our Rhubarb Orange Muffins Recipe:

Ingredients

  • 225 g plain flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp ground almonds
  • 110 g soft brown sugar
  • 2 eggs
  • zest and juice of 1 orange
  • 75 g melted butter
  • 400 g chopped rhubarb

Instructions

  • Preheat oven to 200C/400F/Gas 6
  • Mix all the dry ingredients together. Add the wet ingredients and stir.
  • Add the rhubarb and mix well.
  • Spoon the mixture into paper cases and bake for 25 minutes or until golden brown.
  • These are great as a snack, sweet treat or served with custard for dessert.
