Rhubarb and Yoghurt Cake Recipe

We grow two things at home – strawberries and rhubarb but, until now, we’ve never experimented when it comes to cooking with fresh rhubarb. We would have a tried and tested home made rhubarb crumble or mix things up with a rhubarb and apple crumble but that is as adventurous as we would get. This rhubarb season I decided to make a change and our Rhubarb Yogurt Cake was born!

How difficult is this Rhubarb Yoghurt Cake to make?

I love a cake where you just throw it all in, put it in the oven and see what happens. And this is just that sort of cake. The Greek yoghurt in this rhubarb loaf cake helps it to stay really light and moist whilst the rhubarb gives a really lovely subtle flavour to the cake. It does use a lot of sugar to balance out the tartness of the rhubarb and we use caster sugar but I think normal granulated sugar or brown sugar would work just as well.

Although we also used Greek yogurt for this easy rhubarb cake, plain yoghurt could be a good alternative. You can also make this bake ina standard cake tin instead of a loaf pan but you would need to adjust cooking times accordingly.

We also use self raising flour in this bake for ease but if you wanted you could use all purpose flour and a little baking powder or baking soda and the results should be pretty similar.

This is a great recipe to bake together with the kids – especially if they’ve been able to pick rhubarb with you too. It’s a real farm to plate recipe where you can really show children where the fruit of our labour ends up. Our two loved getting in the kitchen to help with every step of baking this recipe!

What equipment do you need for this easy Rhubarb Yogurt Cake recipe?

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already. We use loaf tin liners to guarantee that bakes come out of the tin easily and they’re great when baking as gifts too.

Rhubarb and Yoghurt Cake

So here’s our delicious Rhubarb and Yoghurt Cake recipe:

Ingredients:

  • 150g rhubarb, finely diced
  • 300g self raising flour
  • 250g caster sugar
  • 1 tsp vanilla extract or vanilla essence
  • 2 eggs
  • 125g Greek yogurt at room temperature
  • 125g melted unsalted butter or margarine

Recipe:

  • Preheat oven to 180C/350F/Gas 4
  • Grease a loaf tin or use a loaf tin liner
  • Put all the ingredients into a large bowl and mix well
  • Pour the batter into the prepared loaf tin and bake for an hour until well risen and golden brown on top.
  • Turn out onto a wire rack and leave to cool completely.
