Honey Fairy Cakes Recipe

I love baking super simple fairy cakes and cupcakes as a sweet treat whenever we feel like one. We often have all the ingredients in the kitchen and cake make cakes at the drop of a hat. So our latest easy bake are these simple but delicious honey fairy cakes.
How do you make honey fairy cakes?
These honey cakes use self raising flour, butter or margarine, eggs and golden caster sugar although white caster sugar or even granulated sugar work well too. The amount of sugar is reduced as the honey adds sweetness to the cakes so you just don’t need as much sugar added.
Although we use self raising flour, you can you plain or all purpose flour with a teaspoon baking powder or baking soda added instead. It’s a super simple recipe that can varied to make use of whatever you have in the cupboard.
We always use super cheap runny honey for this honey cupcakes recipe but you could use any kind of honey you have to hand. Flavour honeys or Manuka Honey would work really well.
Although many people love to add a teaspoon vanilla extract, vanilla essence or lemon zest to their bakes, these taste deliciously of honey and don’t need any additional flavours added.
This recipe makes a dozen cute little cakes in fairy cake cases or six bigger honey muffins. You can easily double or triple the mix to make a bigger batch of cakes and, although we have the cakes plain you could dust them with icing sugar or ice them if you wanted.
In the past, we’ve added a little glace icing to the top, iced with a honey cream cheese frosting or even added a swirl of buttercream. If you make your own icing you can always add a little honey to give an extra boost of honey flavour too.

What equipment do you need to make these Honey Fairy Cakes?
You will no doubt have most of the equipment you need for this recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:
- A 12 hole muffin tin
- Paper cake cases
- A mixing bowl
- Scales
- A wooden spoon
- Measuring spoons
- A wire rack
These are pretty much staples for baking in any home kitchen and once you have them you won’t need to replace them often.
Here’s our little Honey Cake recipe:
Makes: 12 cakes
Ingredients
- 2 eggs
- 200g margarine or unsalted butter at room temperature
- 80g golden caster sugar
- 100g honey
- 200g self raising flour
Recipe
- Preheat oven 180C/350F/Gas 4
- Line a muffin tin with paper cases
- Put all the ingredients in a large bowl and mix until well combined
- Spoon the cake batter mixture evenly between the paper cases
- Bake in the centre of the oven for 15 minutes until golden brown and nicely risen
- Leave to cool completely on a wire rack
