Chocolate Chip Banana Muffins Recipe

LP and I bake all the time now and I always try and think of something new to bake to keep it interesting for her. We had some old bananas to use up and I didn’t fancy making a Banana Bread Loaf again so instead we made Mini Chocolate Chip and Banana Muffins.

Why should you make Chocolate Chip and Banana Muffins?

Banana muffins are a really lovely breakfast idea but also a snack that can be enjoyed at any time of the day. The addition of a few mini chocolate chips make these muffins a really lovely treat too. We have them as an alternative to chocolate brioche and they keep really well for a few days in an airtight container.

For this recipe we use milk chocolate chips but you could use dark chocolate chips or even white chocolate chips if you wanted. Whatever you choose, the muffins will taste fantastic!

These Chocolate Chip Banana Muffins are a great addition to any lunchbox, can be enjoyed as a picnic staple and are easy to take with you on any day out or little adventure. Add to that the fact they use up old bananas, reducing waste, and you have a cake that really ticks every box.

The children love these muffins. They are easy and quick to make, the children can make them pretty much by themselves and it’s a bake they can really get involved in. Plus, they taste great too which is always a bonus. They really are a lovely bake the whole family with enjoy.

Chocolate Chip Banana Muffins Recipe

This banana muffin recipe makes 24 good size chocolate banana muffins but we make half size ones that are great for the kids too. They also freeze well so are great to make in big batches but you could also halve the mix to make twelve good size muffins or even 6 if you wanted just a small number for a day or two or to enjoy over the course of a weekend. This is a great option for making one banana chocolate chip muffins and you’d be able to have 6 full size or 12 mini muffins just by quartering the ingredients.

What equipment do you need to make these muffins?

You will no doubt have most of the equipment you need for this recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:

Here’s our delicious Chocolate Chip and Banana Muffins recipe:

Ingredients

  • 4 eggs
  • 200 g butter/spread
  • 350 g caster sugar
  • 450 g  self-raising flour
  • 2 tsp baking powder / baking soda
  • 6 tbsp milk
  • 4 overripe bananas, mashed
  • 100 g chocolate chunks

Instructions

  • Preheat oven 180C/Fan 160C/gas 4
  • Line muffin pans with cupcake cases
  • Put all the dry ingredients in a medium bowl and mix before adding the wet ingredients including the mashed bananas and stir until combined.
  • Spoon the banana mixture into the cake cases and bake in the oven for 25-30 minutes until browned.
