Banana Bread Recipe

Banana bread is our fail safe recipe for using up old bananas and it’s something we make every couple of weeks without fail. It’s great with a cup of tea, served as dessert with custard or snuck into a lunch box.

As you can tell, a loaf of banana bread doesn’t last long in our house! Compared to our banana cake recipe this isn’t as sweet and has just a really wholesome, homely flavour to it. We also like to make a fruity banana cake that is full of fruit flavours and different textures.

Why make banana bread?

We do all we can to reduce waste and using up past their best bananas really helps with that. This moist banana bread can use even the blackest of bananas and it keeps well in an airtight container for a few days too – if it doesn’t get eaten first!

You can mix up this banana loaf recipe a bit if you want by using whole wheat flour or adding chocolate chips or cocoa powder to make a wonderful chocolate banana bread. All you really need to do is make sure you have ripe bananas at home and a loaf pan and start baking!

What equipment do you need for this easy banana bread recipe?

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already. We use loaf tin liners to guarantee that bakes come out of the tin easily and they’re great when baking as gifts too.

Here’s our delicious easy Banana Bread Recipe:

Ingredients

  • 300 g plain all purpose flour
  • pinch salt
  • 1 teaspoon bicarbonate of soda
  • 75 g butter or margarine
  • 100 g sugar
  • 3 eggs
  • 3 bananas – the riper the better!
  • 15 ml lemon juice

Instructions

  • Grease a loaf tin and preheat the oven to 190C/375F/Gas 5
  • Sift the dry ingredients into a mixing bowl
  • Cream the margarine and sugar and then gradually add the eggs.
  • Mash the banana and lemon juice.
  • Mix everything together and pour into the loaf tin.
  • Bake for 55 minutes until a skewer comes out clean.
