I always have a lot of questions about accommodati I always have a lot of questions about accommodation when we stay anywhere as a family so I thought I’d share this little tour of our room at @windjammerlanding which was a pretty perfect place to stay.

It’s the ‘Ocean View Two Bedroom’ which was like a little house, with an upstairs and downstairs, built into the hillside. Both rooms had outdoor space and their own shower rooms. Such a great option for a family.

We’ve just got back from two glorious weeks in S We’ve just got back from two glorious weeks in St Lucia staying at @windjammerlanding and it was just the holiday we needed. Two weeks of sunshine and relaxation in what must be one of the most beautiful islands in the world. 

We can’t wait to go back again in the future. Here’s just a little snippet of our trip.

The children loved the Little Beaulieu play area and we loved exploring the National Motor Museum and Top Gear exhibit before having a ride on the monorail! We went on an old open topped bus, explored the Beaulieu Manor House and loved the gardens. 
Beaulieu is always a great day out - whatever the weather. This summer they have a whole ‘Summer of Fun’ planned, with activities most days - parades, bird shows and hundreds of sculptures within the grounds too. If you’re looking for a day out this summer definitely think about heading to Beaulieu.
AD - Press Tickets | Tonight we took the kids to t AD - Press Tickets | Tonight we took the kids to their first concert - but it was so much more than just a concert! @abbavoyage is incredible. With CGI ABBA and a live band, it’s like being at an ABBA concert 40 years ago but with modern lighting, effects and sound. ABBA look and sound real, it’s a mind blowing experience.
The set includes all the songs you know and love as well as a few less familiar ones.
You can’t take photos during the show which actually made a refreshing change. A whole arena focused purely on the show and soaking up the moment. It’s definitely something the four of us will always remember.
Now, I’m off to sing Dancing Queen all the way home.
AD - Press Trip | We had such a great day at @phdo AD - Press Trip | We had such a great day at @phdockyard today. They have a fantastic Ultimate Explorer ticket that lets you visit all the attractions as many times as you like for 12 months - and after a day at Portsmouth Historic Dockyard we can see that you need more than one day to really do everything!

We explored HMS Warrior, HMS Victory and the Mary Rose Exhibition - which is incredible! We also saw where ships are built and restored and spent time in Action Stations where the kids climbed and did an assault course.

Portsmouth Historic Dockyard is such a fun, educational day out with something for all ages - we can’t wait to go on their harbour tours next time we visit!

Oh these two! Every day I feel lucky to have them. Oh these two! Every day I feel lucky to have them. As school draws to a close at lunchtime, I’m looking forward to a whole summer with them. My favourite people.

They’ve both had a great year at school this year. Troy’s first without his sister by his side and Athena’s first at secondary school. 

They both had great reports, always did their best and have made some really lovely new friends this year. I could not be more proud of them.

Now, let’s go and enjoy the next six weeks before school starts all over again!

Slow Cooker Pistachio Fudge Recipe

Pistachio is one of my go-to flavours when it comes to anything from desserts to ice cream so it felt only right to make a pistachio fudge recipe with sweetened condensed milk – our tried and tested way. This pistachio fudge combines the fantastic pistachio flavouring with the creaminess of the fudge and the texture of added nuts too. It’s delicious.

Slow Cooker Pistachio Fudge

What do you need to make easy pistachio fudge?

For this recipe we use our typical fudge base made with white chocolate and condensed milk. We add pistachio flavouring to the fudge whilst it cooks and you could add green food colouring too – our flavouring is already green, hence the fudge colour.

We use whole, shelled pistachios for this heavenly pistachio fudge recipe but you could use chopped pistachios if you wanted. We also love using white chocolate for this easy fudge recipe as milk chocolate can be quite overpowering and take away from the pistachio flavour. But, if you want to give milk chocolate a try, just use slightly less chocolate – 500g instead of 600g.

You could add extra flavours to this pistachio chocolate fudge if you wanted by stirring in some dried cranberries for a white chocolate cranberry pistachio fudge and we made a slow cooker pistachio and cherry fudge previously too. Any other dry ingredients can get easily stirred in at the end before you pour the fudge into the tray ready to be put in the fridge.

Can you make this nutty fudge slow cooker recipe in the microwave?

Many people make fudge in the microwave but I much prefer the control I have when I make it in the crock pot or slow cooker. If you don’t have a slow cooker, make it in the microwave by putting the ingredients in a microwave safe bowl and heating on short bursts in the microwave, stirring in between. Then follow the instructions as per the recipe below. It will create a pretty good microwave fudge.

What sort of slow cooker or crockpot should I use?

You can use any slow cookers for this home made fudge but if you have an overly large one you may find it doesn’t take quite as long to cook so adjust the cooking time accordingly.

As with all baking recipes you do need to invest in decent baking paper – we’ve found having good quality sheets makes all the difference. Plus, all fudge, once made, can be cut up and put in food gift bags for a lovely Christmas gift or any other occasion throughout the year. This chocolate and pistachio fudge would make a wonderful gift.

How long does slow cooker fudge keep for?

This slow cooker white chocolate pistachio fudge keeps well in the fridge, in an airtight container for a couple of weeks. The flavour matures over the first couple of days of it being in the fridge so you get the full flavour after it’s been in the fridge for a few days.

Can you make slow cooker fudge with evaporated milk?

Our slow cooker white chocolate fudge works because condensed milk has a really high sugar content, needed to create that beautifully rich fudge. Evaporated milk isn’t the same, doesn’t have that sugar content and isn’t thick enough to help the fudge thicken and set. You can’t use evaporated milk in these recipes – so get some condensed milk instead.

Do you cook slow cooker fudge high or low temperature?

We always cook fudge on a high slow cooker temperature setting and it takes around 40 minutes in total. You could make it on the low setting but it would take longer and would still need to be stirred regularly. You may as well keep the slow cooker on high and be done in under an hour!

When cooking, is the slow cooker fudge lid on or off?

When making slow cooker fudge, you need to remove the slow cooker lid otherwise excess moisture would be retained in the slow cooker pot and the fudge wouldn’t thicken as it needs to.

Slow Cooker Pistachio Fudge

What equipment do you need to make slow cooker fudge?

Slow cooker fudge doesn’t need anything special to make it, and you probably already have everything you need at home, but this is the equipment we use:

  • A slow cooker
  • A wooden spoon
  • A spatula
  • A square baking tin
  • Baking paper sheets
  • Good quality knives to cut the fudge into pieces
  • Airtight containers for storage
  • Food gift bags to package it up and give the fudge as gifts

Once you’ve got everything you need to make the fudge you can just keep making it again and again – in so many different flavours too!

So here’s our recipe for perfect Pistachio Fudge made in the slow cooker:

Ingredients

  • A 397 ml tin condensed milk
  • 600 g white chocolate – can be bars or sweet chocolate chips
  • 1 tbsp pistachio flavouring
  • 100g pistachio nuts – shelled

Instructions

  • Break the white chocolate up and add to the slow cooker bowl with the sweetened condensed milk and pistachio essence.
  • Turn the slow cooker on to high and leave to cook for 40 minutes with the lid off, stirring every ten minutes.
  • When melted, thick and well combined, quickly stir in the pistachios.
  • Pour the mixture into a tin lined with parchment paper or silicone baking tray and put in the fridge to set – preferably overnight.
