Cadbury Chocolate Cake with Mini Eggs Recipe

I love nothing more than seasonal treats and Easter is a great time to get your bake on. For me, simple bakes are the best and a nice and easy chocolate loaf cake, topped with Cadbury Mini Eggs is the perfect Easter bake to share and enjoy.

What do you need to make this Mini Egg chocolate cake?

For this chocolate Mini Egg cake you need typical cake ingredients – butter, eggs, sugar and flour. But, this cake has the addition of chocolate chips and cocoa powder to give it a lovely, rich chocolate finish. We use pretty basic milk chocolate chips and standard cocoa powdet for this bake but you could use Cadbury drinking chocolate or Cadbury Dairy Milk chocolate pieces if you wanted to add an extra level of Cadbury flavour in this milk chocolate cake.

As this is a rich Easter chocolate cake, we don’t add vanilla extract as we would with a more plain cake but you can add a teaspoon of flavouring if you want to, it won’t affect the dairy milk cake recipe.

Can you make this chocolate sponge cake with brown sugar?

For this Cadbury Mini Eggs cake recipe we usually use caster sugar or granulated sugar but light brown sugar works really well too. It’s such an easily adaptable Cadbury family chocolate cake recipe to use whatever you have to hand at the time.

We top this Mini Eggs Easter cake with chocolate frosting and Cadburys Mini Eggs. I use ready made Cadbury Chocolate Icing but you can always make your own chocolate buttercream frosting or ganache if you want to. You could also cut the cake in half lengthways and add a layer of frosting in the middle too – or even vanilla buttercream for a nice flavour combination – and create a simple Easter layer cake.

However, we usually just make bakes as simple as possible so we normally keep this as a plain chocolate loaf cake with an indulgent Easter topping with so many mini chocolate eggs. The whole family love it. For the topping we crush the Mini Eggs slightly by placing them in a bag and hitting them with a rolling pin. You can just use whole Mini Eggs if you want but I love the look that the smashed chocolate eggs give to the cake.

Our Chocolate Easter Cake with Mini Eggs is a great bake for the spring but you can easily vary it by topping with any mini Easter Eggs that you feel like. You could even just top with sprinkles for a bake that can be enjoyed at any time of the year.

What equipment do you need for this easy Easter Mini Egg cake recipe?

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already. We use loaf tin liners to guarantee that bakes come out of the tin easily and they’re great when baking as gifts too.

So here’s our Cadbury Chocolate Mini Egg Cake Recipe:

Ingredients

  • 180g unsalted butter at room temperature
  • 180g caster sugar
  • 3 eggs
  • 200g self raising flour
  • 40g cocoa powder
  • 100g chocolate chips

To decorate

  • Chocolate frosting
  • 100g Mini Eggs, crushed slightly

Recipe

  • Preheat oven at 160C/300F/Gas 2
  • Cream together the butter and caster sugar in a mixing bowl
  • Add the rest of the ingredients and mix well
  • Pour the batter into a lined/greased loaf tin and bake in the middle of the oven for 50 minutes until brown on the top and a skewer comes out clean. Leave to cool completely on a wire rack.
  • Once cool, top with the frosting and Mini Eggs and serve.
