Cheesecake Sundae Desserts Recipe

I have teamed up with Aldi to work on a few recipes for you to enjoy over the summer – or the rest of the year if you feel like it and my first creations are a couple of Cheesecake Sundaes. These are a really simple dessert to put together and taste great too – and all the ingredients you can find at Aldi. You can use the basic cheesecake mix and add pretty much whatever toppings/flavours you like. Here are a couple of my favourites – Both of these recipes create either two really good size desserts or four smaller desserts.

Here’s our Strawberry Cheesecake Sundae recipe:

Ingredients

  • 200g Strawberries, hulled
  • 5 digestive biscuits
  • 300g low fat soft cheese
  • 200g low fat greek yogurt
  • 15g caster sugar
  • 0.5 tsp vanilla essence

  • Reserve 4 strawberries. Blend the rest in a blender/food processor.
  • Break the biscuits up in a food processor.
  • Mix the cheese, yogurt, sugar and vanilla.
  • Spoon the biscuit mix into glasses followed by the cheesecake mix and then add a layer of blended strawberry. Repeat in layers, finishing with the strawberry layer.
  • Top with the remaining strawberries and chill until ready to serve.

These look fantastic. I love cheesecake in all forms and in summer mango cheesecake is my absolute favourite. So refreshing, you can almost taste the sunshine x
