Easy Lemon Fork Biscuits Recipe

We love making fork biscuits and our traditional, plain fork biscuits are always well received. However, it’s sometimes nice to have different flavour biscuits. We often make chocolate fork biscuits and have started making lemon fork biscuits which are delicious.
What are fork biscuits?
Fork biscuits are super easy to make – with just flour, sugar and butter – along with lemon zest in the case. Thanks to the fork indentations in the top, the biscuits bake really nicely, giving crisp but melt in the mouth biscuits that everyone will love.
What ingredients do you need to make fork biscuits?
For this recipe we like to use unsalted butter, caster sugar and self raising flour but you can use margarine, granulated sugar and plain flour with a little baking powder if you like as well. It’s a great recipe for using whatever you have in the cupboard.
These easy lemon biscuits are super quick to make – all done within half an hour – and always look fancy, despite being super simple to make. Depending on how big we scoop the cookie dough, we can make between 16 and 32 cookies from this one batch – and you can make them as big or as little as you like. We find using a teaspoon as a measure works well.
This is our go to biscuit recipe for any occasion. They last well in a jar or airtight container and you can even dust them with a little icing sugar if you want to but we tend to leave them plain.
I think Mary Berry did a fork biscuit recipe once and like with all good biscuit recipes, the best ones are the ones passed down through generations. I’ve been baking these forever and the children love them.

You can make this homemade biscuits recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

Here’s our super easy recipe for Lemon Fork Cookies:
Makes: 16 biscuits
Ingredients
- 150g butter at room temperature
- 75g caster sugar
- 225g self raising flour
- Zest of one lemon
Recipe
- Preheat oven 180C/350F/Gas Mark 4
- Lightly butter or line two baking trays.
- Put all the ingredients in a bowl and mix well with a wooden spoon to bring the mixture together to form a cookie dough.
- Portion the mixture out using a spoon or scoop, roll into balls and place on the baking trays about 2 inches apart. We use a teaspoon to measure the mix out – a little goes a long way! You should end up with little walnut sizes dough balls.
- Press each dough ball down gently with a fork.
- Bake for 15-20 minutes in the preheated oven until the cookies have spread and are golden brown on top.
- Leave to cool slightly before transferring to a wire rack to cool completely.
