Fork biscuits are super easy to make – with just flour, sugar and butter – along with lemon zest in the case. Thanks to the fork indentations in the top, the biscuits bake really nicely, giving crisp but melt in the mouth biscuits that everyone will love.

Ingredients
150gbutter at room temperature
75gcaster sugar
225gself raising flour
Zest of one lemon
Instructions
Preheat oven 180C/350F/Gas Mark 4
Lightly butter or line two baking trays.
Put all the ingredients in a bowl and mix well with a wooden spoon to bring the mixture together to form a cookie dough.
Portion the mixture out using a spoon or scoop, roll into balls and place on the baking trays about 2 inches apart. We use a teaspoon to measure the mix out – a little goes a long way! You should end up with little walnut sizes dough balls.
Press each dough ball down gently with a fork.
Bake for 15-20 minutes in the preheated oven until the cookies have spread and are golden brown on top.
Leave to cool slightly before transferring to a wire rack to cool completely.
