We’ve been trying to eat more vegetarian meals and so I’ve turned to the slow cooker to help. Our latest vegetarian dish is a slow cooker vegetarian curry based on our slow cooker lamb rogan josh and slow cooker beef rogan josh with just a few tweaks to make it vegetarian. It’s actually a vegan rogan josh recipe so everyone can enjoy it.

How do you make this Slow Cooker Vegetarian Rogan Josh?

This is one of the easiest slow cooker recipes we have ever made as you literally put all the ingredients in the slow cooker and leave it to work it’s magic. You can stir it every couple of hours if you want to but if you’re out all day it will still be beautifully cooked when you get home.

What vegetables do you need for this slow cooker Rogan Josh curry?

For this easy curry you can use literally any vegetables you like. We usually use a big bag of frozen mixed veg – carrots, cauliflower and broccoli – as it’s a super affordable option for a meal like this. But, you can use either frozen or fresh veg and could use your favourites – butternut squash, sweet potatoes, aubergine, courgette, peppers – literally anything you feel like.

We also add a few potatoes, tinned tomatoes or diced tomatoes, a chopped onion and chickpeas to add some extra texture and protein to the mix. Everything then cooks together with stock and spices, creating a thick, rich, tomato based curry that isn’t too spicy and works well as both a main dish or side dish. This is one of our favourite easy recipes made in the slow cooker.

This is a pretty healthy slow cooker curry and one that doesn’t use a rogan josh paste or any kind of curry paste. Instead, we make this vegetable curry using spices and red chilli flakes – no chilli powder in sight. It’s a really authentic curry and one we love.

This veggie Rogan Josh is an incredibly easy recipe to vary. You can use literally whatever you have in the fridge, freezer and cupboards at the time. You could add some lentils or beans for extra protein and

If you prefer a creamy curry you could always add some coconut milk to the mix and add extra dried chillies if you like more heat to your curry. If towards the end of cooking your curry sauce doesn’t seem thick enough, stir in a little bit of flour for the last bit of cooking time.

How do you serve this easy slow cooker vegetable curry?

We serve this curry simply with rice, poppadoms and naan bread and you could sprinkle some fresh coriander over the top too. You could also use this vegan curry as a side dish as part of a big curry night spread. It’s a really versatile curry and a great meat free Monday option!

Makes: 10 portions

Vegetable Rogan Josh ingredients

  • 8 white potatoes, quartered
  • 1kg mixed chunky vegetables – can be frozen or fresh. Cauliflower, broccoli, carrots etc.
  • 100g frozen peas
  • 1 onion, chopped
  • 3 garlic cloves, crushed
  • 1 tsp ground ginger
  • 1 teaspoon ground turmeric
  • 2 teaspoons ground coriander
  • 2 teaspoons cumin seeds, roughly crushed
  • 2 teaspoons garam masala
  • 1/2 teaspoon crushed dried chillies
  • 2 x 400g can chopped tomatoes
  • 400g chickpeas, rinsed
  • 300ml strong vegetable stock made with two stock cubes

Instructions

  • Put everything in the slow cooker and cook on low for 6-8 hours, stirring every few hours if you can.
