Banana Passionfruit Muffins Recipe

We love making muffins and have started to experiment by using whatever we have in the fruit bowl at the time. Our latest creation is Passionfruit Banana Muffins that turned out so well and is a great way to use up bananas that are going past their best.

We recently discovered the children’s love of passionfruit and so now often have them at home but baking is a great way to use them if they’ve been sitting around a while.

The passionfruit flavour works so well with the mashed banana, creating a really moist and light bake, perfect for breakfast, afternoon tea or a snack at any time. They’re also great for dessert served with custard!

What equipment do you need to make these fruit muffins?

You will no doubt have most of the equipment you need for this recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:

Here’s our easy recipe for delicious Banana Passion Fruit Muffins:

Makes 18 muffins

Ingredients

  • 4 eggs
  • 200 g butter/spread at room temperature
  • 350 g caster sugar
  • 450 g self-raising flour
  • 2 tsp baking powder
  • 3 overripe bananas
  • Passionfruit pulp from 4 passion fruits

Instructions

  • Preheat oven 180C/Fan 160C/gas 4
  • Line muffin tins with muffin cases
  • Put all the ingredients including the passion fruit pulp into a large bowl and mix until combined.
  • Spoon the banana mixture into the cake cases in the muffin pan and bake in the oven for 25-30 minutes until browned.
