This Never Fail Soft Chocolate Chip Cookie Recipe is amazing as it’s just so adaptable. This crispy chocolate chip cookies recipe below is for classic chocolate chip cookies but you can substitute the 250g of chocolate chips for 250g of whatever you like. We’ve had a great success with choc and nut, white chocolate and cranberry or a mixture of different chocolate chips.
We’ve also experimented with different types of sugar. We prefer to use soft, light brown sugar but have also used simple granulated sugar and the recipe still works well.

Here’s our Never Fail Chewy Chocolate Chip Cookies Recipe – happy baking!
Ingredients
- 125 g unsalted butter at room temperature
- 185 g soft brown sugar
- 1 tsp vanilla extract
- 1 egg beaten
- 1 tbsp milk
- 215 g plain flour / all purpose flour
- 1 teaspoon baking soda / baking powder
- 250 g chocolate chips – or chocolate chunks!
Instructions
- Preheat oven to 180c/Gas Mark 4. Line a baking tray with baking paper or parchment paper.
- Cream butter & sugar in a large bowl. Mix in the vanilla extract and gradually add the egg – beating well. Stir in the milk.
- Sift the dry ingredients – flour & baking powder into a large bowl and then fold into the butter and egg mixture.
- Stir in the choc chips.
- Drop tablespoons of the chocolate chip cookie dough balls mixture onto a baking sheet leaving approx 4cm between each one to give the cookies spread room.
- Bake for 15 mins or until lightly browned. They should still be soft in the centre!
