Nutella Rocky Road Recipe

One of our family’s favourite sweet treats is rocky road. You can’t go wrong with a big slab of rocky road with melted chocolate and pretty much anything you have in the cupboard.

But, our latest creation is a no bake Nutella rocky road, full of chocolatey, nutty flavour and perfect for any Nutella fan.

How do you make Nutella rocky road?

For this Nutella rocky road recipe you simply melt together chocolate and Nutella hazelnut spread before stirring in broken up biscuits, hazelnuts and marshmallows. 

You then spread the mixture our in a tin and leave it in the fridge to set for at least four hours or preferably overnight. We use an 8 inch square tin but you can use any size tin you like. If you want a Nutella rocky road bark you just need to spread the mixture out thinner instead of this chunky rocky road traybake.

How much chocolate for rocky road?

For this Nutella tray bake rocky road we use a total of 500g of milk chocolate and Nutella which gives a good amount of chocolate, covering all the ingredients nicely and giving a really rich, indulgent finish. But you can use even more chocolate if you want to. 

Can you vary this recipe?

For us, simpler is better when it comes to rocky road. But, if you wanted you can add glace cherries or dried fruit to the mixture or maybe even finish with a few Ferrero Rocher chocolates – but we find they tend to lose their crispness if the rocky road isn’t eaten straught away.

A lot of people also add butter or golden syrup to the melted chocolate and you can if you like but we don’t find it necessary. As we said, simpler is better with rocky road! 

This rocky road keeps well in an airtight container for a few days although it never lasts that long! It’s such a lovely treat that everyone loves, you can easily vary for different tastes or dietary requirements and is super simple to make too.

Rocky Road doesn’t need anything special to make it, and you probably already have everything you need at home, but this is the equipment we use:

Nutella Rocky Road Recipe

Here’s our tasty Nutella Rocky Road recipe:

Ingredients:

  • 300g milk chocolate – can be bars or milk chocolate chips
  • 200g Nutella
  • 100g mini marshmallows
  • 100g hazelnuts
  • 150g digestive biscuits

Recipe:

  • Break up the chocolate bars into small pieces and put it in a large glass bowl with the Nutella
  • Melt using the glass bowl over simmering water or in the microwave using short blasts and stirring regularly.
  • Once melted, leave to cool slightly for 5-10 minutes.
  • In a separate bowl, mix the biscuit pieces with the nuts and marshmallows.
  • Pour in the melted chocolate and stir well.
  • Pour the chocolate mixture into cake tin or brownie pan lined with baking paper or parchment paper.
  • Put in the fridge to set for at least 4 hours.
  • Slice and serve.
