Lotus Biscoff Butter Cookies Recipe

The children absolutely love Lotus Biscoff and would eat the biscuits and cookie butter spread every day if we let them. Instead, we bake with Lotus spread often and our latest creation is Lotus Biscoff butter cookies. Full of Biscoff flavour, they are the perfect treat for any Biscoff fan.

How do you make Lotus Biscoff cookie butter cookies?

To make these Lotus Biscoff cookies you just need butter, sugar, an egg, vanilla and self raising flour as well as Lotus Biscoff cookie spread. We use smooth Biscoff spread but you can use crunchy if you prefer.

Although we use self raising flour, you can also use plain flour or all purpose flour and a little baking powder or baking soda if you prefer. You can also add milk chocolate chips to the cookie dough to create Biscoff chocolate chip cookies if you want to.

We have also been known to get two of these Biscoff spread cookies and sandwich them together with yet more cookie butter, chocolate spread – or even peanut butter for delicious sandwiched Biscoff peanut butter cookies.

Lotus Biscoff Butter Cookies Recipe

So here’s our delicious Biscoff Butter Cookies Recipe:

Ingredients

  • 110g unsalted butter room temperature
  • 140g Lotus Biscoff Spread
  • 100g light brown sugar
  • 40g caster sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 200g self raising flour

Recipe

  • Preheat oven to 180C/350F/Gas 4 and line two baking sheets with greaseproof paper or baking parchment
  • In a large mixing bowl cream together the butter and sugar
  • Stir in the Biscoff cookie butter spread, egg and vanilla extract before adding the flour
  • Scoop portions of mix from the bowl, roll into a ball and put on the lined baking sheet, leaving about two inches between the cookie dough balls to give the cookies room to spread
  • Bake in the centre of the oven for 12 minutes until they’re beautifully cracked and golden brown
  • Transfer to a wire rack to cool
