Lemon Blueberry Yogurt Cake Recipe

A while ago we made a Blueberry Yogurt Cake and it turned into one of our favourites to make regularly. However, I was asked by readers to make a Lemon Blueberry Yogurt Loaf Cake and it couldn’t have been a nicer bake.

How to make a Blueberry Lemon Yogurt Cake?

To make this lemon blueberry cake, you simply need typical cake ingredients – flour, sugar, eggs, butter and the lemon plus yoghurt and the lemon and blueberry flavours.

Lemon Blueberry Yogurt Cake Recipe

We use self raising flour for this recipe but you could also use plain flour and a little baking soda or baking powder if you wanted. We also use Greek yoghurt which helps to keep the bake lovely and moist but plain yogurt ot natural yogurt both work well too.

The same goes for sugar – for this lemon yogurt blueberry cake we use caster sugar but golden caster sugar or granulated sugar would also be fine substitutions. You can also use fresh bluebrries or frozen blueberries, either work really well in this bake. We have used frozen blueberries so many times and it always turns out beautifully. You can also use fresh lemon juice and lemon zest or long life versions. 

We always serve this cake plain – it’s delicious still warm from the oven. But, you could dust this blueberry lemon cake with icing sugar or add a little icing or cream cheese frosting if you wanted to make it a bit more fancy.

We bake this lemon bluebrry yogurt cake all the time. It’s perfect as an after school snack for the kids, to have in lunchboxes or as part of a picnic and the children love it for breakfast too. It’s also lovely as part of an afternoon tea spread or for a school bake sale.

What equipment do you need for this easy Lemon Blueberry Yogurt Cake recipe?

You can make this moist lemon blueberry cake with yogurt recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, this moist lemon blueberry yogurt cake uses all things you probably have already. We use loaf tin liners to guarantee that bakes come out of the tin easily and they’re great when baking as gifts too. This easy yogurt cake doesn’t need much to make and is so simple to bake. 

Lemon Blueberry Yogurt Cake Recipe

So here’s our delicious Lemon Blueberry Yoghurt Cake recipe:

Ingredients:

  • 150g blueberries
  • 300g self raising flour
  • 250g caster sugar
  • Zest and juice of half a lemon
  • 2 eggs
  • 125g Plain Greek yogurt at room temperature
  • 125g melted unsalted butter or margarine

Recipe:

  • Preheat oven to 180C/350F/Gas 4
  • Grease a loaf pan or use a loaf tin liner
  • Put all the ingredients aside from the blueberries into a large bowl and mix well
  • Stir in the blueberries
  • Pour the cake batter into the prepared loaf tin and bake for an hour until well risen and golden brown on top.
  • Turn out onto a wire rack and leave to cool completely.
