Apple Rock Cakes Recipe

Rock cakes are something I’ve been enjoying since childhood. They’re something I have fond memories of my mum making – and I would love coming home from school to a house that smelt like freshly baked rock cakes, with them sitting happily on a baking tray on the side.

But since then I have made many different types of rock cakes, and we’re always experimenting with different flavours to use up whatever we have in the kitchen. Our latest rock buns are apple rock cakes with a little cinnamon in to complement the apple flavour.

How do you make rock cakes?

For these apple rock cakes we use simple ingredients – flour, butter or margarine and sugar along with eggs and fruit. Although we use self raising flour for this recipe you could instead use all purpose flour or plain flour along with a tsp baking powder or baking soda if you wanted.

We also tend to use caster sugar for this recipe but light brown sugar or granulated sugar work well. It’s such a nice recipe to use whatever ingredients you have to hand. Real traditional baking where you make do with what you have!

How long do these cakes last for?

Unlike other bakes, these rock cakes are best eaten on the day that they are baked. If stored in a tin or airtight container they do tend to go soft and lose that rocky-ness because of the apple in them. But, they are still tasty and very much edible for a few days.

Apple Rock Cakes Recipe

So here’s our apple rock cake recipe – happy baking!

Ingredients

  • 400 g Self raising flour
  • 2 tsp ground cinnamon
  • 200 g margarine or unsalted butter at room temperature
  • 150g caster sugar – although demerara sugar works quite well too and gives a nice crunch.
  • 150g apple, roughly chopped
  • 50g mixed dried fruit – currants/sultanas/mixed peel/glace cherries/cranberries etc
  • 2 eggs

Instructions

  • Grease 2 baking sheets and preheat oven to 200C/400F/Gas 6
  • Sift the flour and cinnamon into a large bowl. Rub in the margarine until the mixture resembles breadcrumbs.
  • Stir in the sugar and dried fruit to the flour mixture.
  • Crack the eggs into a measuring jug and beat lightly.
  • Dollop the mixture into rocky heaps on the baking sheets leaving space between them.
  • Bake for 15-20 mins in the preheated oven until golden browned. Cool on a wire rack.
