Golden Syrup Fairy Cakes Recipe

The latest in our bank of fairy cake and cupcake recipes is this wonderfully sweet Golden Syrup Fairy Cake recipe. They’re a lovely bake for breakfast, a snack or as part of an afternoon tea spread or party food buffet.
I love a super easy bake where you just throw all the ingredients in, mix and bake and these little golden syrup cupcakes are just like that. So simple but taste delicious and the whole family love them. They’re great in the kids lunchboxes too!
What do you need to make Golden Syrup Cakes?
For this little golden syrup cakes we use typical baking ingredients – flour, sugar, butter and eggs plus golden syrup. We love to use golden caster sugar for this recipe but you could use regular caster sugar, light brown sugar or granulated sugar would be fine too.
You can happily use margarine for these little golden syrup muffins if you wanted – butter or margarine spread both work really well. Because we use self raising flour you don’t need any baking powder. We tend to use medium eggs for this recipe but have used large eggs in the past – either will work well.
We leave these cakes plain once baked but you could sprinkle with icing sugar or even make a little frosting and use a piping bag to swirl it on top. They never last long enough in our house to bother icing them but we do occasionally drizzle extra golden syrup over the tops!

What equipment do you need to make these Golden Syrup Fairy Cakes?
You will no doubt have most of the equipment you need for this recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:
- A 12 hole muffin tin
- Paper cake cases
- A mixing bowl
- Scales
- A wooden spoon
- Measuring spoons
- A wire rack
These are pretty much staples for baking in any home kitchen and once you have them you wonโt need to replace them often and will be able to make this golden syrup cupcake recipe again and again.
Hereโs our little Golden Syrup Cake recipe:
Makes: 12 cakes
Ingredients
- 2 eggs
- 200g margarine or unsalted butter at room temperature
- 80g golden caster sugar
- 100g golden syrup
- 200g self raising flour
Recipe
- Preheat oven 180C/350F/Gas 4
- Line a muffin tin with paper cases
- Put all the ingredients in a large bowl and mix until well combined
- Spoon the cake batter mixture evenly between the paper cases
- Bake in the centre of the oven for 15 minutes until golden brown and nicely risen
- Leave to cool on a wire rack
