Ingredients
110gunsalted butterat room temperature
140gLotus Biscoff Spread
100glight brown sugar
40gcaster sugar
1eggbeaten
1teaspoonvanilla extract
200gself raising flour
Instructions
Preheat oven to 180C/350F/Gas 4 and line two baking sheets with greaseproof paper or baking parchment
In a large mixing bowl cream together the butter and sugar
Stir in the Biscoff cookie butter spread, egg and vanilla extract before adding the flour
Scoop portions of mix from the bowl, roll into a ball and put on the lined baking sheet, leaving about two inches between the cookie dough balls to give the cookies room to spread
Bake in the centre of the oven for 12 minutes until they’re beautifully cracked and golden brown
Transfer to a wire rack to cool
