Mincemeat Middle Cupcakes

We love finding new ways to use up leftover mincemeat without making endless batches of mince pies! We decided to create mincemeat middle cupcakes as a twist on a jammy middle cupcake recipe and they’ve turned into something lovely to enjoy baking with the children over the festive season.

Why do we love Mincemeat Middle Cupcakes?

These mince pie cupcakes have a lovely mincemeat centre, just like a mince pie but with that wonderful cake consistency instead of pastry. They rise well in the muffin tins and are finished simply with a dusting of icing sugar.

You could use a piping bag to ice the tops with buttercream if you wanted which we do if we’re making them for guests over Christmas and want to be a little bit fancy!

We love creating new bakes with all those festive flavours and simple gooey middle mincemeat muffins have turned into something the whole family love and I know we’ll be making them throughout December and probably well into the new year through January too!
