We decided to create mincemeat middle cupcakes as a twist on a jammy middle cupcake recipe and they’ve turned into something lovely to enjoy baking with the children over the festive season.

Ingredients
280gself raising flour
175gcaster sugar
2eggs
1/2tspvanilla extract
75gmelted butter or margarine
80gmincemeat
icing sugar
Instructions
Preheat the oven to 200C/400F/Gas 6
Line a muffin tray with cupcake cases
Put the flour, sugar, eggs, vanilla and butter in a bowl and mix well.
Share half the mixture between the cupcake cases
Put a teaspoon of mincemeat on top of the mixture in the centre of each cupcake case
Share the remaining batter between each of the cupcake cases, covering the mincemeat
Bake for 20 minutes until risen and golden brown
Leave to cool completely before dusting with icing sugar
