Our Super Easy Cherry Flapjack Recipe

I’ve never met anyone that doesn’t love a flapjack. That chewy, sweet mix of oats and sugar. But, as much as we love plain flapjacks I also love to add some flavours to the mix too. Our latest creation is a fresh cherry flapjack recipe that is so easy to make – with just glace cherries added to the mix – but that tastes fantastic too.
Why should I make a flapjack?
Flapjack recipes are so easy to make – cooked from start to finish in around half an hour with very little prep time. This makes them such a great bake if you have friends coming over, have a school bake sale you’d forgotten about or just want something simple for the family to tuck into over a weekend. They’re a great alternative to cookies.
What’s great about a cherry flapjack?
I love creating recipes that just use up store cupboard ingredients – which is one of the reasons I love flapjacks. I always have everything you need for a flapjack in the cupboards at home. One other thing I always have is a tub of glace cherries.
Glace cherries make everything better. Stick them on fairy cakes, stir them into a fruit cake or add them to a flapjack! This recipe couldn’t be simpler and yet it’s now one of my favourite flapjacks. The children will be sick of cherries soon!
How can I vary this cherry flapjacks recipe?
If you wanted you could stir some chocolate pieces into the mix to make a cherry chocolate flapjack or add some extra dried fruit to give the flapjack some variety and a little more texture or you could even add some desiccated coconut for a cherry coconut flapjack.
These flapjacks store well in an airtight container for up to a week however, they never last that long in our house. Flapjacks disappear pretty much as quick as we make them!
What equipment do you need for this flapjack recipe?
You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

Here’s our Cherry Flapjack Recipe:
Ingredients
- 150 g margarine or butter
- 150 g soft brown sugar
- 90 ml golden syrup
- 300 g porridge oats
- 200 g glacé cherries
Instructions
- Preheat the oven to 160C/325F/Gas 3 and grease a suitable baking tin.
- Put the margarine in a saucepan and melt over a low heat. Add the sugar and syrup, stirring until melted together.
- Add the rolled oats and cherries and stir until combined.
- Spread mixture onto the baking tray and bake for 25 minutes until golden brown.
- Slice with a sharp knife whilst still warm and leave to cool completely in the baking tray.
