Candy Cane Rocky Road Recipe

Candy canes are so symbolic of Christmas that I’ve wanted to make a candy cane rocky road to enjoy over the festive season for years – and I’ve finally got around to it! There really is nothing like a Christmas Rocky Road to share and enjoy at this time of year.

What is Candy Cane Rocky Road?

Candy cane rocky road is a Christmas themed version of a classic rocky road. Full of all the rocky road staples like chocolate, marshmallows, biscuits and cherries but with the added twist of candy canes, sprinkles and a wonderful minty flavour.

For this easy Christmas rocky road recipe we use dark chocolate instead of our typical milk chocolate and we add a little peppermint essence to add to the mint flavour of the candy canes. However, you could just use mint chocolate if you wanted.

We use shortbread biscuits for this recipe as they work well with the Christmas theme but you could use digestive biscuits or any other biscuits you feel like. I’d steer clear of gingerbread though as I don’t think it would work well with the mint flavour of this peppermint rocky road.

Although we have kept the main ingredients of this mint rocky road fairly traditional, you could add a festive twist with other dried fruit like dried cranberries or some nuts. The great thing about rocky road is you can add pretty much anything you like.

We also top this rocky road with festive sprinkles along with the candy canes. You can use any sprinkles you like but green and red smarties or M&Ms work well alongside any festive sprinkles in the supermarket!

How do you make rocky road?

Chocolate rocky road is a fantastic no bake treat. You simply melt the chocolate, butter and golden syrup before adding all the pieces you’d like in it. Stir well, pour into a dish, flatten nicely, add sprinkles and refrigerate until you’re ready to slice into rocky road bars and serve. It could not be easier.

How to gift wrap rocky road?

If you’re looking to gift rocky road then it’s easy to package. We cut it up into squares and pile them in individual cellophane bags. You could cut into large squares or small bite size chunks, whatever you prefer. Tie with a ribbon and add a gift tag to make a really lovely, homemade gift.

Here’s our tasty Candy Cane Rocky Road recipe:

Ingredients:

  • 400g dark chocolate
  • 125g unsalted butter or margarine
  • 45ml golden syrup
  • 1 tsp peppermint essence or flavouring
  • 200g shortbread biscuits, broken into pieces
  • 50g mini marshmallows
  • 100g glace cherries
  • 50g candy canes, roughly 4 – crushed

To decorate:

  • Break up the chocolate and put it in a large bowl with the butter, golden syrup and peppermint flavouring.
  • Melt chocolate mixture using the heatproof bowl over a pan of simmering water on a low heat or in the microwave using short blasts and stirring regularly.
  • Once melted, leave to cool slightly for 5-10 minutes.
  • In a separate bowl, mix the biscuit pieces, crushed candy canes, marshmallows and glace cherries.
  • Pour in the melted chocolate and stir well.
  • Pour the chocolate mixture into a lined cake tin or brownie pan.
  • Top with the candy cane pieces and sprinkles.
  • Put in the fridge to set for at least 4 hours.
  • Slice and serve.
