Strawberry Flapjacks Recipe

I love using fresh fruit in baking where possible and our latest bake was these easy strawberry flapjacks. They are a lovely twist on a classic plain flapjack but with the addition of lovely fresh chopped strawberries. Delicious!

How do you make Strawberry Flapjacks?
For this Strawberry Flapjacks recipe you use all the traditional flapjack ingredients – rolled oats, sugar, butter and golden syrup but with added chopped strawberries to give a really lovely fruity flavour.

We always use light brown sugar for our flapjack recipes but you can use pretty much any sugar you have to hand – granulated sugar or golden caster sugar both work really well too.
We also use unsalted butter for this simple flapjack recipe but margarine is fine as well. Flapjacks really are something so quick and easy that you can tweak to use whatever you have in the kitchen at home.

We prefer to use fresh strawberries for this recipe as they give a lot of flavour and work really well, just needing a little extra cooking time compared to other flapjacks to get rid of the excess moisture.
You could try making strawberry flapjacks with frozen strawberries but we’ve found the bake ends up far too wet. Dried strawberries are another alternative but they usually don’t have enough flavour – although you could add some strawberry flavouring for an extra flavour boost.

These strawberry flapjacks would make a great choice for a bake sale, buffet spread or just to have as a sweet treat in the afternoon. We’ve also been known to have them as a quick breakfast and add them to lunchboxes or picnics. Flapjacks are such a versatile bake and last well for a few days in an airtight container too.

Here’s our Strawberry Flapjack Recipe:
Ingredients
- 150g margarine or butter
- 150g soft brown sugar
- 90ml golden syrup
- 300g porridge oats
- 200g fresh strawberries, cut into small pieces

Instructions
- Preheat the oven to 160C/325F/Gas 3 and grease or line a suitable baking tin.
- Put the margarine in a saucepan and melt over a low heat. Add the sugar and syrup, stirring until melted together.
- Add the rolled oats and strawberries and stir until combined.
- Spread the oat mixture onto the baking tray and bake for 30 minutes until golden brown.
- Slice with a sharp knife whilst still warm and leave to cool completely in the baking tray.
