Mincemeat Shortbread Recipe

Our latest mincemeat recipe is this fantastic Mincemeat Shortbread, a great way of using up leftover mincemeat or something to make as an alternative to mince pies.
What is mincemeat shortbread?
Mincemeat shortbread is exactly what it says – sweet shortbread pastry with mincemeat. In this recipe, we sandwich mincemeat between two layers of shortbread, creating mincemeat shortbread bars that are perfect for the festive season. The mincemeat filling works so well and is a great alternative to plain shortbread at Christmas time.
We’ve kept this recipe super simple and have just sprinkled sugar over the top of the buttery shortbread but a lot of people like to add flaked almonds so feel free to add them before baking if you like. You can also dust with icing sugar but however you have it, it’ll be the perfect Christmas treat.
For this easy recipe you can use shop bought mincemeat or your own mincemeat if you feel like making your own. You can also crumble the dough on top of the mincemeat rather than having a full layer of mincemeat to create a mincemeat shortbread crumble slice if you want something a little bit different.
This is such a great recipe for December – and the rest of the year when you find a jar of mincemeat at the back of the cupboard! Shortbread and sweet mincemeat baked together is a fantastic combination and something the whole family love.

So here’s our Mincemeat Shortbread Recipe:
Ingredients:
- 250g butter at room temperature
- 125g caster sugar
- 1 tsp vanilla
- 350g plain flour
- 300g mincemeat
To finish
- A little granulated sugar or caster sugar
Recipe:
- Preheat oven to 180C/350F/Gas 4
- Grease or line a baking tin. I use an 8 inch square one.
- Cream the butter and caster sugar in a large bowl with the vanilla.
- Add the flour and mix well until it comes together to form a dough.
- Roll or press half of the dough into the base of the tin.
- Spread mincemeat over the dough.
- Roll out the rest of the dough and press on top of the mincemeat layer. Prick all over with a fork.
- Bake in the centre of the oven for 30-35 minutes until lightly golden browned and then remove from the oven.
- Sprinkle with sugar and leave to cool completely in the tin before cutting into mincemeat shortbread squares or mincemeat slices.

Hi, trying these soon, how do I store them to keep them fresh and how long will they keep?
We usually eat straight after baking – they never last that long in our house! If not eating them the same day we just put them in an airtight container.
Hi, I’ll be making these next week, having made a test batch earlier in the year. They are lovely, but can I freeze them so I can be prepared with a good batch over the festive period

I will, as you can freeze shortbread and you can freeze mince pies I’m betting on them being fine! Fingers crossed
