Rhubarb & Orange Muffins Recipe
These are such a lovely, seasonal back and the orange and rhubarb flavours compliment each other beautifully.

- 225 g plain flour
- 2 tsps baking powder
- 1/2 tsp salt
- 1 tblsp ground almonds
- 110 g soft brown sugar
- 2 eggs
- zest and juice of 1 orange
- 75 g melted butter
- 400 g rhubarb chopped roughly.
Preheat the oven to 200C/400F/Gas 6
Mix all the dry ingredients together. Add the wet ingredients and stir.
Add the rhubarb and mix well.
Spoon the mixture into paper cases and bake for 25 minutes or until golden brown.
These are great as a snack, sweet treat or served with custard for dessert.
