Lotus Biscoff Loaf Cake Recipe

This Lotus Biscoff Loaf Cake is a beautifully moist, delicious cake that can be sliced and served easily. It’s decorated simply with melted Biscoff spread and crushed Lotus Biscoff cookies. It’s a great choice for any Biscoff fan and works well for anything from an afternoon tea spread to a school bake sale.

Ingredients

  • 230 g light brown sugar
  • 250 g self raising flour
  • 220 g unsalted butter or margarine
  • 3 large eggs
  • 100 g Lotus Biscoff Spread

Topping

  • Melted Biscoff Spread
  • Lotus Biscoff biscuits Crushed

Instructions

  • Preheat oven at 160C/300F/Gas 2
  • Cream together the butter and sugar in a mixing bowl
  • Add the rest of the ingredients and mix well
  • Pour the cake batter mixture into a lined/greased loaf tin and bake in the middle of the oven for 50-60 minutes until brown on the top and a skewer comes out clean. Leave to cool completely on a wire rack.
  • Drizzle with the melted Biscoff spread and scatter the crushed Lotus biscuits on top. Slice and serve.
