Slow Cooker Spicy Lentil and Sausage Hotpot Recipe

If you love a dish that can be eaten with crusty bread from a bowl then our Spicy Lentil and Sausage Hotpot could be perfect for you. The lentil hotpot is wholesome, filling and full of flavour as well as being budget friendly too. This is a great dish to cook on a cold winter’s evening but is really lovely to enjoy at any time of year, whatever the weather and on any day of the week.
Why should we cook the Sausage Slow Cooker Hotpot?
Despite the number of ingredients, this is a really easy slow cooker meal to cook and once in the pot it cooks pretty much by itself. It’s cheap as chips to make – as sausages and lentils are such affordable foods and you could substitute the lentils for beans or other pulses if you wanted.
This lentil casserole is a great meal to put on in the morning after the school run or before you go to work, knowing it will be ready when you are in the evening.
We use pork sausages in this dish but you could use vegetarian sausages and switch the chicken stock for vegetable stock to make a vegetarian lentil hotpot instead. Regular or vegetarian, it really is a lovely comfort food.
What should I have with the Slow Cooker Spicy Lentil and Sausage Hotpot?
You don’t need to serve this slow cooker sausage casserole with potatoes. It’s a great one pot and perfect just served with bread. It’s so thick that the bread can be used instead of cutlery, scooping up all the spicy lentil goodness from the dish. We have had various breads with this easy sausage hotpot but something on the crusty side works best – a French stick, toasted pitta or ciabatta.
If you’d like a side dish for the sausage hot pot slow cooker recipe a simple salad would work well – a greek salad with olives and feta or a mix of cucumbers, tomatoes and green leaves. A nice salad goes well with any dish and this is no exception. Mostly though we enjoy this sausage casserole recipe on it’s own with bread.
Unlike other slow cooker recipes, this healthy slow cooker sausage stew isn’t any good for freezing. This is one to cook and let the whole family enjoy straight away, still warm from the pot – the kids love it!

Here’s our Slow Cooker Spicy Lentil and Sausage Hotpot Recipe – happy cooking!
Ingredients
- Spray oil
- 8 pork sausages halved
- 1 onion
- 1 tbsp paprika
- 3 cloves garlic
- pinch of dried chilli flakes
- a good sprinkle of dried rosemary
- 2 celery sticks finely chopped
- 3 peppers deseeded and finely chopped
- 200 g red lentils rinsed
- 450 ml chicken stock made with two stock cubes
Instructions
- Spray a large frying pan with olive oil and brown the sausages – you don’t need to cook sausages, just make sure they’re brown and sealed all over. Add to the slow cooker pot.
- Spray the pay again with oil, add the onion and cook for a couple of minutes. Add the paprika, garlic, chilli flakes and rosemary as well as the celery and peppers. Cook for 5 minutes.
- Stir in the lentils, add the stock and bring to the boil. Add everything to the slow cooker on top of the sausages.
- Cover and cook on low for 8 hours.
- Serve with crusty bread or toasted pitta.

It got me thinking a person could make different variations, like turkey and sundried tomato with spinach, or Moroccan chicken with apricots, raisins, ground coriander and cumin. My mind is working overtime!
