How do you make a slow cooker hot pot?

This chicken hotpot recipe is one of our favourite slow cooker recipes as it’s something the whole family love. You can use any kind of chicken for this recipe for chicken hot pot but chicken thighs work best as they retain moisture and don’t dry out during cooking like chicken breasts do.

You can vary this chicken slow cooker recipe by using sweet potato instead of the traditional potato and the prep time and cooking time would be the same. We sometimes add red peppers to it for a bit of variety too.

Slow Cooker Chicken and Sage Hot Pot

So here’s our Slow Cooker Chicken and Sage Hot Pot Recipe – happy cooking!

Ingredients

  • spray olive oil
  • 500 g boneless skinless chicken thighs
  • 1 onion sliced
  • 4 bacon rashers chopped
  • 2 tablespoons plain flour
  • 600 ml chicken stock
  • dried sage
  • 2 large carrots diced
  • half a swede diced
  • 600 g potatoes sliced thinly
  • 25 g butter

Instructions

  • Spray a large pan with oil and cook the chicken, bacon and onion until browned.
  • Stir in the flour and then add the stock, stirring. Add a good sprinkle of dried sage.
  • Put the carrots and swede in the slow cooker pot and pour over the chicken mixture.
  • Place the potatoes on top, overlapping slightly and cook on low for 8 hours.
  • Take the slow cooker pot from the slow cooker. Add butter on top of the potatoes and heat under the grill until browned.
