Slow Cooker Chicken & Haricot Bean Stew Recipe

This Slow Cooker Chicken and Haricot Bean Stew recipe is a really versatile dish that you can change in so many ways – Add different beans, add peas or other veg. It’s yummy and oh so moreish! It’s definitely one of our favourite chicken slow cooker recipes. Serve in a bowl with crusty bread.
Why should you make this Slow Cooker Haricot Bean Stew?
This is a fantastic one pot slow cooker meal that the whole family will love. It’s one of our favourite easy stew recipes. It’s just so easy to put on in the morning and you know it will be ready when you are.
You could even leave the chicken out and bulk up on beans and vegetables to make this a really lovely meat free vegetarian or even vegan dish.
This chicken white bean stew has a really deep chicken flavour and it makes such a difference to beef or tomato based stews. It’s rich, full of flavour and works so well with crusty bread on the side.
What chicken should we use for this recipe?
We tend to use boneless skinless chicken thighs for any slow cooker recipe as they are pretty hardy and cope well with cooking for a long time compared to skinless chicken breasts. You could instead use skinless chicken portions like chicken legs or chicken drumsticks – just be careful of the bones when it comes to eating!
This chicken casserole recipe uses cans of white haricot beans but you can use dried haricots beans if you’d rather – you would just need to soak them in cold water overnight before use. Other tinned pulses would work – just steer clear of baked beans! Chicken and cannellini beans or butter beans would be great as a haricot bean substitute.
Although we first started making this haricot bean casserole in the winter we’ve now enjoyed it all year round. As it’s a one pot dish it’s ready when you are.
It’s a healthy meal, convenient, easy to cook, full of flavour and quite cheap too. It’s a real hearty meal in a bowl and one that is often on our meal plans. This is a real one pot dish but you can serve it with some french green beans if you like too.
We often have leftovers which are fantastic heated up the next day for lunch – I hate wasting food – and smaller portions are great with a side salad too.

So here’s our Slow Cooker Chicken and Haricot Bean Stew Recipe – Happy Cooking!
Ingredients
- Spray olive oil
- 750 g skinless boneless chicken, preferably thighs
- 1 onion sliced
- 2 cloves garlic crushed
- 2 tablespoons plain flour
- 600 ml chicken stock
- 1 pepper sliced
- 100 g frozen sweetcorn
- 2 cans haricot beans drained
- 300 g new potatoes sliced thinly
- dried thyme
Instructions
- Spray a large pan with oil and cook the onions and chicken for a few minutes until browned.
- Add the garlic and flour, stirring a little. Then add the stock and mix well.
- Add the pepper, sweetcorn, haricot beans and potatoes and add a good sprinkle of thyme.
- Transfer to the slow cooker pot and cook on low for 8 hours.
