This Slow Cooker Chicken & Haricot Bean Stew recipe is a really versatile dish that you can change in so many ways – Add different beans, add peas or other veg. It’s yummy and oh so moreish! Serve in a bowl with crusty bread.

Ingredients

  • Spray oil
  • 750 g skinless boneless chicken, preferably thighs
  • 1 onion sliced
  • 2 cloves of garlic crushed
  • 2 tablespoons plain flour
  • 600 ml chicken stock
  • 1 pepper sliced
  • 100 g frozen sweetcorn
  • 2 cans haricot beans drained
  • 300 g new potatoes sliced thinly
  • dried thyme

Instructions

  • Spray a large pan with oil and cook the onions and chicken until browned.
  • Add the garlic and flour, stirring. Add the stock and mix well.
  • Add the pepper, sweetcorn, haricot beans and potatoes and add a good sprinkle of thyme.
  • Transfer to the slow cooker pot and cook on low for 8 hours.
