Mince Pie Cookies Recipe

I love finding alternative ways to use mincemeat than just traditional mince pies when we’re doing some Christmas baking so I’ve created some mince pie cookies for the festive season. These are simple to make, quick to bake and are a lovely treat to make in the lead up to Christmas as well as just a way of using up leftover mincemeat. A great alternative for people who love mince pies!
These mincemeat cookies are the sort of things that I’d happily eat all year round if I found a jar of mincemeat in the cupboard! They’re a great addition to an afternoon tea and perfect for baking when you’re expecting guests. They’re a great way of using up homemade mincemeat too!
It’s so nice finding festive treats that the whole family will enjoy in the run up to Christmas and these cookies are always a hit with everyone who tries them. They’re firm on the outside, lovely and soft in the middle and full of all the flavours of the festive season.
These little festive biscuits have turned into one of our favourite festive recipes and one that we’ll be making every December without fail.

If you’re short of time, these are fantastic even without the icing drizzle. You could even drizzle them with chocolate instead for an extra level of decadence!
These aren’t mincemeat filled cookies and instead have the mince meat mixed into the cookie mixture. This home made mincemeat cookie recipe is simple to make and the children even love working through it themselves. They are pretty much the perfect Christmas cookies!

Here’s our Mince Pie Cookies Recipe:
Preparation Time: 10 Minutes Cooking Time: 12 Minutes
Ingredients
- 125g unsalted butter
- 185g soft brown sugar – although caster sugar will work too
- 1tsp vanilla extract
- 1 egg beaten
- 230g plain flour
- 1tsp baking powder
- 100g mincemeat
- 100g raisins
- icing sugar
Recipe
- Pre heat oven to 180c/Gas Mark 4. Line a baking tray with baking paper or use greased baking sheets.
- Cream butter and sugar together in a large bowl. Mix in the vanilla extract and gradually add the egg – beating well.
- Sift the flour and baking powder into a large bowl and then fold into the butter and egg mixture. Stir in the mincemeat and raisins.
- Drop tablespoons of mixture onto baking trays leaving approx 4cm between each one as they expand.
- Bake for 12 mins or until lightly browned.
- Leave to cool completely on a wire rack, then mix together icing sugar and water and then drizzle icing over the cookies. The cookies will be a little bit doughy in the middle and firm on the edges.

I really need to bake some of these with my granddaughter
These look and sound delicious.
I just made these with my son, they were really nice especially when still warm!! Only suggestion is that I would prefer more mincemeat for more of a “mince pie” taste.
