Orange Fairy Cakes Recipe

I love making individual cakes as they’re perfect for picnics, breakfast or lunch boxes. Our latest creation are these Orange Fairy Cakes that are simple to make and delicious.
How do you make Orange Fairy Cakes?
For these orange fairy cakes we use typical cake ingredients of flour, sugar and oil instead of unsalted butter or margarine. I find, at times, that this makes the bake ultra moist and light. It works really well with the orange flavour. We also use self raising flour for ease but you can also use plain flour and a little baking powder or baking soda if you wanted instead.
To give the orange flavour we simply add fresh orange juice and orange zest but making sure you add the grated zest before juicing the orange – you’ll get really messy otherwise! We use standard oranges for this recipes but blood oranges or even clementines would work well too.
You can make these little orange cakes in tiny fairy cake cases or in bigger muffin cases and in bigger cases the mix creates 18 cakes – many more if using smaller cases. If making tiny cakes, make sure you bake them for a shorter amount of time – maybe ten minutes – or they’ll burn really easily.
I finish these moist orange cakes with a drizzle of icing made with icing sugar, water and some orange juice, orange flavouring or orange extract. It gives a nice colour to the icing and tastes great too. You could always leave them plain or add some orange cream cheese frosting instead – whatever you feel like!

Makes: 16 cakes
Ingredients
- 2 eggs
- 110ml vegetable oil
- 250ml semi skimmed milk
- Juice and zest of 1 orange
- 250g caster sugar
- 400g self raising flour
Decoration
- Icing sugar
- Orange juice/orange flavouring
Recipe
- Preheat oven 180C/350F/Gas 4
- Line muffin trays with paper cases. You can either use two muffin tins or bake a dozen muffins before doing the rest.
- Mix all the ingredients together in a large mixing bowl.
- Divide the mixture between the cake cases and bake in the centre of the oven for 15 minutes until risen and golden brown on top.
- Leave to cool on a wire rack.
- When completely cool, add the orange juice or orange essence to the icing sugar along with a little water and stir until you have a nice, icing consistency and drizzle over the muffins.
- Leave to set and enjoy.
