These simple cakes are a really versatile bake that the whole family will love. They’re perfect for any occasion from school bake sales to an afternoon tea spread and we make them with no occasion or excuse in mind!

Ingredients
2eggs
110mlvegetable oil
250mlsemi skimmed milk
Juice and zest of 1 orange
250gcaster sugar
400gself raising flour
Decoration
Icing sugar
Orange juice/orange flavouring
Instructions
Preheat oven 180C/350F/Gas 4
Line muffin trays with paper cases. You can either use two muffin tins or bake a dozen muffins before doing the rest.
Mix all the ingredients together in a large mixing bowl.
Divide the mixture between the cake cases and bake in the centre of the oven for 15 minutes until risen and golden brown on top.
Leave to cool on a wire rack.
When completely cool, add the orange juice or orange essence to the icing sugar along with a little water and stir until you have a nice, icing consistency and drizzle over the muffins.
Leave to set and enjoy.
