Lotus Biscoff Pancakes Recipe

As a family we love pancakes. We make them pretty much any weekend we’re at home and although we love classic lemon and sugar pancakes we do love to try new things and be a little creative with the pancakes we make.
We love making drop scones and banana pancakes but our latest creation is delicious Biscoff Pancakes – American style, made with Lotus Biscoff Spread, giving a wonderful Biscoff cookie butter flavour to a simple stack of pancakes.
Lotus Biscoff cookies are such a classic flavour and one that is getting more and more popular as time goes by. Our Lotus Biscoff fudge is one of our most popular recipes and I can completely understand why!
How do you make Biscoff Pancakes?
To make fluffy Biscoff Pancakes you make an easy pancake batter using oil, light brown sugar, milk, self raising flour, a pinch of salt, an egg and that all important Biscoff cookie spread. Although we use light brown sugar you could also use demerera sugar, muscavado sugar or just granulated sugar. Really just use whatever you have to hand – they’ll still be fantastically tasty Lotus pancakes!
We also use self raising flour for these Biscoff spread pancakes but you could use all purpose flour and a little baking powder instead and some people like to add vanilla extract to their pancakes but we do without. I love our fluffy pancakes to just have that wonderful Biscoff flavour.
The main thing when making these pancakes is to make sure you whisk together the ingredients really well, that the dry ingredients are fully absorbed and that you cook them over an even heat until they’re nicely golden brown on both sides.
How do you serve these Biscoff American pancakes?
We top the pancakes with some melted Biscoff cookie butter – literally a couple of dollops of Biscoff spread zapped in the microwave for a minute, and also crushed Biscoff cookies, sprinkled on the top just before serving. You could also add a handful of chocolate chips if you want to.

Here’s our easy Biscoff Pancakes recipe:
Makes: 6-8 pancakes
Ingredients:
- 1 tablespoon olive oil
- 65g Biscoff spread
- 25g light brown sugar
- 1 egg
- 240 ml milk
- 200g self raising flour
- Pinch salt
To decorate:
- Biscoff spread
- Lotus Biscoff biscuits
Recipe:
- Mix all the ingredients together in a large mixing bowl. We use an electric hand mixer but you can do it by hand.
- Head a frying pan or skillet over a medium heat and spray with a little oil.
- When hot, add a ladle of mixture to the pan and leave to cook.
- When brown and cooked on one side, flip over. It will only take a minute or so on each side to be nicely cooked.
- To serve, melt the extra Biscoff spread in the microwave and drizzle over the pancakes. Top with crushed Lotus biscuits and enjoy.

George loves pancakes we have them often, never thought to use Biscoff that sounds delicious! Will have to try and make a dairy free biscoff version for him by swapping the milk out for vegan milk.
