Carte D’Or Christmas Pudding Sundae Recipe

Last week I was sent a really lovely delivery from Carte D’Or – everything I needed to create a Christmas Pudding Sundae! Now, I love a pudding. I also love Christmas. So the idea of this ice cream sundae recipe was mind blowing to me and I couldn’t wait to give it a go. Christmas desserts are always out favourites.
When should you make a Christmas Pudding Sundae?
This quick Christmas Pudding Sundae is a great way of using up leftover Christmas pudding – and you could use Christmas pudding ice cream for an extra level of festive flavour if you wanted too. This is such a fantastic Christmas dessert with next to no prep time but it’s definitely not those who are healthy eating!

If you’d like to make a sundae that the whole family can enjoy, leave off the mulled wine and the children will love it! This recipe usually serves four but you can easily vary the quantities to serve more or less when recreating this at home. You could even switch the Christmas pudding to panetone or Christmas cake to use whatever you have available. I love versatile recipes like this!
The combination of the Christmas pudding, lovely warm sauce and creamy ice cream was wonderful. Ice cream sundaes are the perfect way to finish a festive meal. This will definitely be my new favourite way to eat Christmas Pudding and Carte D’Or will be my go to accompaniment to Christmas pudding from now on – even when eating it the traditional way.

Here’s the easy and delicious Carte D’Or Christmas Pudding Sundae recipe:
Ingredients
- 8 scoops of Carte D’Or Vanilla Ice Cream (200g/400ml)
- 200g Christmas Pudding
- 100g cranberry sauce
- 2 tbsp mulled wine
- 2 tsp sugar
- 2 tbsp flaked almonds, toasted
- 1 tbsp chocolate shavings
Recipe
- CRUMBLE the Pudding into a small pan. Place on a low heat and warm through.
- MIX the cranberry sauce, mulled wine and sugar in a separate pan. Bring to the boil and stir for two minutes to combine.
- SPOON half of the warmed pudding between four tall sundae glasses.
- DRIZZLE over a spoonful of hot cranberry sauce over the warmed Pudding and top with a scoop of Carte D’Or Vanilla Ice Cream.
- REPEAT the layers with the remaining warm pudding and hot cranberry sauce and finish with a scoop of Carte D’Or Vanilla Ice Cream in each sundae glass.
- SPRINKLE with toasted flaked almonds and chocolate shavings. Serve immediately.

Ingredients
- 200 g Vanilla Ice Cream
- 200 g Christmas Pudding
