Apple Fairy Cakes Recipe

I love making cakes with whatever we have in the house and a recipe we make often is Apple Fairy Cakes. Great for using up apples that are going past their best, this little apple cake recipe is one the children love.
What do you need to make Apple Fairy Cakes?
These simple fairy cakes are made with typical cake ingredients – butter, sugar, eggs and flour. We use any butter or margarine that we have at home and I tend to use caster sugar although light brown sugar or even granulated sugar would be fine too.
We also use self raising flour for ease in this easy fairy cake recipe but you could use plain flour and a little baking powder or baking soda if you wanted. We all some vanilla essence or vanilla extract for flavouring and the last thing you need is apples.
What apples should you use for apple cakes?
I know many people will only use cooking apples to bake with but for these simple apple cupcakes we use any apples we have at home. We’ve used Golden Delicious, Granny Smiths, Braeburn and so many other kinds of apples. Any eating apples will be fine for this recipe and you don’t need to soak them in lemon juice or anything either – just chop them up and add to the mix!
Can you vary this recipe?
If you’d like to make apple and cinnamon cupcakes instead simple add a teaspoon of ground cinnamon to the mix. You could also add other fruit if you wanted – apple and blackberry fairy cakes would be delicious!
Although we leave these cakes plain and enjoy them pretty much straight from the oven, you could dust them with icing sugar reminiscent of a traditional German apple cake or you could top with icing – I know that’s one our extended family would love! It really just depends on how much time you have.
Another great way of varying this little apple cakes recipe is to add a teaspoon ground cinnamon to them for a real taste of autumn. You can make them easily into little apple cinnamon cakes. Apple and cinnamon are flavours that go so well together and these mini apple cakes will taste great with or without the extra flavouring.
The kids love these little fruit cakes for breakfast and they’re perfect for adding to lunchboxes or taking on a picnic too. Super easy, they’re full of flavour and taste delicious. Plus, if you’re looking for an easy dessert you can heat them up and serve with a ball of ice cream or pour some custard over the top! A great alternative to apple pie.

What equipment do you need to make these little Apple Fairy Cakes?
You will no doubt have most of the equipment you need for this recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:
- A 12 hole muffin tin
- Paper cake cases
- A mixing bowl
- Scales
- A wooden spoon
- Measuring spoons
- A wire rack

Here’s our easy Apple Fairy Cakes recipe:
Makes: 12 cakes
Ingredients:
- 170g unsalted butter or margarine at room temperature
- 170g brown sugar
- 1 tsp vanilla extract
- 170g self raising flour, sifted
- 3 eggs
- 2 apples, peeled, cored and finely chopped
Recipe:
- Preheat oven to 200C/400F/Gas 7
- Line a muffin tray with paper cases.
- Put all the ingredients in a large bowl and mix well.
- Spoon the cake batter mixture into the paper cases and bake for 20 minutes and golden brown.
- Leave to cool completely and enjoy.

Yep, you’d just have to add a little baking powder/baking soda to give it some rise.
