Banana and Summer Fruit Muffins Recipe

We love making muffins. They’re such a nice sweet treat, a great option for on the go breakfasts and just something yummy to make at home. Any muffins with banana in them are a great way of using up overripe bananas and a good excuse to bake too!

These Banana Summer Fruit Muffins are based on our Banana Blueberry Muffins recipe and we now have a bag of frozen summer berries in the freezer at all times purely to make these! They are so tasty!

All the dry ingredients are store cupboard staples and so we make these muffins whenever we have bananas going past their best. Despite the name, using frozen berries meals that you can make these summer berry muffins at any time of the year.

Can you use fresh summer fruits in this recipe?

If you’d rather use fresh summer berries, you can use a fresh assortment of mixed berries – blueberries, blackcurrants, raspberries, blackberries and redcurrants. You could even use dried fruit if you like but I love the taste when using frozen berries – they’re just like fresh berries!

Banana and Summer Fruit Muffins

Here’s our easy recipe for delicious Banana and Summer Fruit Muffins:

Makes 18 muffins

Ingredients

  • 4 eggs
  • 200 g butter/spread at room temperature
  • 350 g caster sugar
  • 450 g self-raising flour
  • 2 tsp baking powder
  • 3 overripe bananas
  • 150g frozen summer berries

Instructions

  • Preheat oven 180C/Fan 160C/gas 4
  • Line muffin tins with muffin cases
  • Put all the ingredients, aside from the berries, in a large bowl and mix until combined.
  • Stir in the frozen berries.
  • Spoon the banana mixture into the cake cases and bake in the oven for 25-30 minutes until browned.
