Banana and Summer Fruit Muffins

These Banana Summer Fruit Muffins are so easy to make using over ripe bananas and frozen or fresh blueberries. Great for breakfast or a sweet treat in the afternoon.

Ingredients

  • 4 eggs
  • 200 g butter/spread at room temperature
  • 350 g caster sugar
  • 450 g self-raising flour
  • 2 tsp baking powder
  • 3 overripe bananas
  • 150 g frozen summer berries

Instructions

  • Preheat oven 180C/Fan 160C/gas 4
  • Line muffin tins with muffin cases
  • Put all the ingredients, aside from the berries, in a large bowl and mix until combined.
  • Stir in the frozen berries.
  • Spoon the banana mixture into the cake cases and bake in the oven for 25-30 minutes until browned.
