Banana Oat Mug Cake Recipe

I always love finding new recipes to use up leftover or over ripe bananas and our latest discovery is mug cakes. Made in the microwave, they are super quick to make and use much less energy than making a conventional cake in the oven.

How do you make a banana mug cake?

To make a mug cake you simply put all the ingredients in a mug, mix well and microwave briefly. However, we usually put the ingredients in a jug first to make sure we can mix it really well without any bits being left unmixed at the bottom. It’s the easy to pour the mixture into the mugs ready to cook.

When do you make mug cakes?

Mug cakes can be made for any occasion. They’re great as a sweet treat whenever you need one and we often have them in the evening with a movie, as an after school treat for the kids or even mid-morning at the weekend. There’s no limited when it comes to mug cake cooking times!

We like to keep our mug cakes as simple as possible – using just self raising flour, light brown sugar, an egg and whatever flavours we feel like. However, you can always use plain flour and a little baking powder of bicarbonate of soda if you wanted to. You could also use oat flour and add a drizzle of maple syrup or a dollop of peanut butter if you wanted. Mug cakes are super easy to experiment with.

Banana Oat Mug Cake Recipe

In this cake, our pretty much instant oatmeal banana mug cakes are flavoured with bananas and rolled oats but you could add vanilla, a sprinkle of cinnamon, pumpkin spice or any other flavours you wanted too. Mug cakes are such a lovely, old fashioned treat and one the children absolutely love.

Our basic banana oatmeal mug cakes are a great alternative to banana bread and great if you’re looking for a double or single serving cake rather than having to bake a whole loaf cake for just a couple of people. Some people call these cakes banana blender muffins – as you can put everything in a blender before sticking it in the microwave for a fantastic twist on a classic muffin.

So here’s our Microwave Banana Oat Mug Cake Recipe:

Makes two mug cakes

Ingredients:

  • 1 banana
  • 4 tbsp oats
  • 4 tbsp self raising flours
  • 4 tbsp light brown sugar
  • 1 egg

Recipe

  • Mash the banana and add the rest of the ingredients to it
  • Beat well with a fork
  • Divide the mixture evenly between two mugs
  • Sprinkle with a few more porridge oats
  • Microwave on full power for 90 seconds
  • Leave to cool slightly before eating – enjoy!
