Simple Pecan Flapjacks Recipe

We love flapjacks and always enjoy finding new things to put in them. I found some pecans in the cupboard and thought I’d see how pecan flapjacks would turn out – and they turned out so well I thought I’d share it with you.

Simple Pecan Flapjacks

Any kind of nuts work so well in a flapjack but I love the flavour of pecans. I first tried this recipe using just whole pecans but the size of the pecans meant that it didn’t hold together. Instead, using chopped pecans and just a few full ones for decoration worked really well.

For this flapjack recipe I use golden syrup but if you love the classic maple and pecan flavour you could always use maple syrup to create pecan and maple syrup flapjacks instead. The consistency would be the same and just the flavour that would be different, creating a real traditional maple pecan flapjack recipe.

Why make flapjacks?

Flapjacks keep really well in an airtight container and are fantastic for lunchboxes or an mid-afternoon pick me up. They’re also so easy to make – from start to finish in just over half an hour and using just ingredients that most people will have at home already.

We love making flapjacks. The combination of the sweet sugar, butter and golden syrup, mixed with rolled oats and so lovely and chewy. It’s something the whole family love. They’re great for afternoon tea or a sweet treat after any family meals.

Simple Pecan Flapjacks

What equipment do you need for this flapjack recipe?

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already – that is what makes flapjacks so simple and convenient to make.

Here’s our Pecan Flapjack Recipe:

Ingredients

  • 150 g margarine or butter
  • 150 g soft brown sugar
  • 90 ml golden syrup
  • 300 g porridge oats
  • 100 g pecan nuts, chopped

Instructions

  • Preheat the oven to 160C/325F/Gas 3 and grease a suitable baking tin.
  • Put the margarine in a saucepan and melt over a low heat. Add the sugar and syrup, stirring until melted together.
  • Add the rolled oat and chopped shelled pecans and stir until combined.
  • Spread mixture onto the baking tray and bake for 25 minutes until golden brown.
  • Slice whilst still warm and leave to cool completely in the baking tray.
