Ham, Cheese and Tomato Quesadilla Recipe

Quesadillas are such a lovely, easy lunch and can be eaten hot or cold – Dave quite often takes them to work cold for lunch or I do them hot for lunches at home so I thought it would be nice to share our quesadilla recipe with you. It’s such an easy recipe to adapt to suit anyone’s tastes and is really quick to make.
What are quesadillas?
Simply put, quesadillas are two tortilla wraps, with a filling, that are fried on both sides and cut into trianbles much like a pizza. They’re a great alternative to sandwiches and the children often choose to have ham cheese quesadillas instead of ham cheese sandwiches at lunch time!
But, for adults, it’s nice to vary the quesadillas flavour a little and make it more exciting than simply cheese ham quesadillas. We often make cheese and ham quesadillas and add some chutney to mix things up a bit or make cheesy chicken quesadillas with pre cooked chicken and cheese. But, this recipe is our favourite.
What can you put in a quesadilla?
You can literally put anything in a quesadilla – as long as there’s cheese of some form to hold it all together. Try pulled pork, chicken, ham – the list is endless! Quesadillas are a great way of using up leftovers like leftover ham from a roast dinner and the cheese can be any kind as long as it melts! We love cheddar or mozzarella in our quesadillas.
It’s great to experiment with flavour combinations and as quesadillas are so cheap to make they really are a lovely, economical but interesting lunch that the whole family can enjoy and we’ve even had them for dinner before. The children love them as they think they’re a flat sandwich but also quite like a pizza and we’ve realised that if food is fun the children are more likely to eat more of it than if it’s just another sandwich.
It’s lovely finding healthy lunch options that work for everyone in the family and it takes no time at all to whip up a batch of quesadillas – and before long you won’t even need the quesadillas recipe. it really is that simple.
Grated cheese quesadillas are a staple in our house and we always vary the quesadilla recipe to include anything we have left in the cupboards or fridge. Our favourites are cheddar cheese and tomato quesadillas or ham and cheese ones.
It’s a really lovely recipe that can suit any day of the week and any variety of fillings – why not give it a try for yourself. Bacon is amazing in them for a bit of a different twist on a bacon sandwich and great for breakfast. You can even serve delicious quesadillas with a dipping sauce – anything from ketchup or mayonnaise to sour cream or greek yogurt!

This quesadilla recipe is for ham, mozzarella, tomato and basil quesadillas – happy cooking!
Ingredients
- 2 flour tortillas per person
- 1 ball of mozzarella for 3-4 people
- 3 slices of ham per person
- 1/2 a tomato per person, sliced
- half a dozen fresh basil leaves per person
- spray oil
Instructions
- Spray a large frying pan or skillet with spray oil or a drizzle of olive oil and heat.
- When the oil is hot add a tortilla wrap to the pan. Keep the skillet over medium heat.
- Layer ham, cheese, tomato and basil on the tortilla and place another tortilla wrap on top.
- Press the top down firmly with a turner and when the bottom is browned turn the whole thing over – this takes practice, things may fall out!
- Press the top down again whilst the bottom cooks and when brown after a couple of minutes remove from the pan.
- Cut into slices like a pizza and eat with your hands!

- 1 ball of mozzarella for 3-4 people
- 3 slices of ham per person
- 1/2 a tomato per person

- Spray a large frying pan with oil and heat. When the oil is hot add a tortilla wrap to the pan. Layer ham, cheese, tomato and basil on the tortilla and place another tortilla wrap on top.

- Press the top down again whilst the bottom cooks and when brown remove from the pan.
- Cut into slices like a pizza and eat with your hands!
