Ginger Fairy Cakes Recipe

I love the taste of ginger and it always makes for really wholesome tasting bakes. Our latest creation are these simple ginger fairy cakes that the whole family loved. It’s so nice to bake cakes that make the house smell amazing and that the children really enjoy too.

What do you need for this ginger cake recipe?

For these ginger cakes we use light brown sugar, golden syrup and ground ginger to give a real depth of flavour. To make sure the cakes are as gingery as possible we also add glace stem ginger which gives bursts of flavour throughout the bake. Although we use golden syrup, you could also try using black treacle which makes for a darker bake too.

We enjoy these mini cakes plain but you could dust them with icing sugar or add some icing or cream cheese frosting to the top once they’ve been left to cool completely and finish with more glace ginger if you wanted to make them prettier for a buffet or afternoon tea spread.

These simple mini ginger cupcakes have a delicious gingerbread taste to them, full of flavour but a great bake for throughout the year, not just at Christmas. They’re a lovely warming and comforting bake that we enjoy at any time of the day – for breakfast or a sweet treat in the afternoon.

What equipment do you need to make these little Ginger Fairy Cakes?

You will no doubt have most of the equipment you need for this recipe at home already but, in case it helps, here are the things we use to bake these cakes at home:

Ginger Fairy Cakes Recipe

Here’s our easy Ginger Fairy Cakes recipe:

Makes: 18 cakes

Ingredients:

  • 300g unsalted butter or margarine at room temperature
  • 300g brown sugar
  • 4 tsp ground ginger
  • 1 tsp vanilla extract
  • 30g golden syrup
  • 300g self raising flour, sifted
  • 3 eggs
  • 100g glacé ginger

Recipe:

  • Preheat oven to 200C/400F/Gas 7
  • Line a muffin tray with paper cases.
  • Put all the ingredients in a large bowl and mix well.
  • Spoon the mixture into the paper cases and bake for 20 minutes and golden brown.
  • Leave to cool and enjoy.
