Banana and Rhubarb Loaf Cake Recipe

I’ve come to realise that pretty much anything goes well in a banana cake and so my latest creation was a light, moist banana and rhubarb loaf cake.

How do you make a Banana and Rhubarb Loaf Cake?

For this Banana and Rhubarb Loaf Cake we use typical cake ingredients – butter, flour, sugar and eggs – plus bananas and chopped rhubarb. Like most banana cakes, the riper the bananas, the better!

This is very much like a banana bread recipe – a banana rhubarb bread recipe. We use self raising flour for ease but you could also use whole wheat flour or plain flour along with a little baking powder or tsp baking soda if you wanted. We also use caster sugar for this delicious sweet rhubarb banana bread recipe but light brown sugar or golden caster sugar would work well too.

Can you use frozen rhubarb in this recipe?

We’ve only made this banana rhubarb cake with fresh rhubarb but frozen rhubarb would work too as long as you can cut it into small pieces. It’s definitely worth giving it a try as we make cakes with frozen fruit all the time.

The kids absolutely love this rhubarb banana loaf recipe. It’s a cake we often make to slice for breakfast but it would also work well as part of an afternoon tea spread or simply enjoyed with a cup of tea.

What equipment do you need for this easy rhubarb and banana cake recipe?

You can make this recipe simply with things you already have in your kitchen but here are the things we use in case there’s something you don’t already have:

As you can see, it’s all things you probably have already. We use loaf tin liners to guarantee that bakes come out of the tin easily and they’re great when baking as gifts too.

Banana and Rhubarb Loaf Cake Recipe

So here’s our Banana and Rhubarb Loaf Cake recipe:

Ingredients

  • 100 g unsalted butter
  • 125 g caster sugar
  • 2 eggs beaten
  • 2 ripe bananas mashed
  • 150g rhubarb, chopped
  • 200 g self raising flour

Instructions

  • Preheat oven 170C/325F/Gas 3 and grease a loaf tin or line with baking parchment/baking paper.
  • Cream the butter and sugar together in a large bowl until light and fluffy.
  • Add the eggs, beating continuously before adding the mashed bananas and rhubarb.
  • Add the flour and mix well before pouring into the loaf pan.
  • Cook for 60 minutes and until a skewer inserted into the center comes out clean.
  • Leave to cool completely on a wire rack.
